Gluten Free Chocolate Protein Waffles with Fresh Raspberry Sauce

Gluten Free Chocolate Protein Waffles with Fresh Raspberry Sauce

Gluten free chocolate protein waffles topped with fresh raspberry sauce for a healthy breakfast treat!

Ingredients

  • 2 cups Bob's Red Mill Grain Free Paleo Pancake & Waffle Mix
  • 4 scoops Bob's Red Mill Chocolate Protein Powder Nutritional Booster
  • 4 eggs
  • 1 1/2 cups water
  • 1/4 cup coconut oil, melted
  • 3 tablespoons cacao powder
  • 2 teaspoons cinnamon
  • 2 cups fresh raspberries
  • 2 tablespoons raw honey (or more to taste)
  • 1 tablespoon lemon juice

Instructions

  1. Heat a waffle iron to medium heat for 10 minutes.
  2. In a large mixing bowl, whisk together all ingredients until combined. Scoop about 1/3 cup waffle batter (more depending on your waffle iron, use manufacturer's cup if possible) onto heated waffle iron. Close top and cook until done. Repeat with remaining batter to make 4-6 waffles, depending on the size of your waffle iron.
  3. In a medium saucepan, combine raspberries, honey and lemon juice. Simmer until raspberries soften then use a fork to break them apart. Continue simmering until juices become syrupy. Serve over waffles.
