I really have a soft spot for brownies. They’re one of my all-time favorite sweets. I like mine dense and fudgy, not cake-like. Plop a scoop of vanilla ice cream on top and I’m a happy gal. Simplicity. This Toffee Brownies A La Mode Ice Cream Cake takes that simplicity just a step further with the addition of toffee to the ice cream and a layer of fudge in between and makes this cake something to really talk about.

Now, don’t scoff here because this is a semi-homemade creation. There’s nothing to say you can’t make everything from scratch. You certainly can but sometimes you’ve got company coming and you need a few shortcuts. It’s okay to take shortcuts. Shortcuts are still delicious! Boxed brownies are still magical, especially if they’re Ghirardelli. Uh-huh! YUM! Then a carton of vanilla bean ice cream gets even better with the addition of toffee bits. Put it all together and you’ve got brownies a la mode perfection. This is seriously good folks! Brownies topped with fudge, vanilla ice cream and toffee. How could this be anything but amazing?

I mean, just look at that thick, gooey fudge just beckoning to you and those butter bits of toffee! But maybe you don’t love toffee like I love toffee. Go ahead and change it up! How about cookies and cream ice cream? Or chocolate chip ice cream? Whatever flavor you choose if there are brownies and ice cream involved, it’s sure to be a hit.

Toffee Brownies A La Mode Ice Cream Cake

Toffee Brownies A La Mode Ice Cream Cake

Fudgy brownies topped with vanilla toffee ice cream and hot fudge for a decadent ice cream cake.


  • 1 box brownie mix and ingredients required to prepare them OR homemade
  • 1 1/4 cup hot fudge topping, divided
  • 1.5 quart high-quality vanilla bean ice cream
  • 1 1/2 cups coarsely chopped chocolate covered toffee bits, like Heath, divided


  1. Prepare brownies according to package directions or whip up a homemade batch in a 9x13-inch glass baking dish lined with parchment paper. Use a large piece of parchment and allow it to hang over the sides of the baking dish to make removing the ice cream cake easier later. Cool baked brownies completely.
  2. Warm 1 cup hot fudge just until spreadable consistency. Top cooled brownies with 1 cup hot fudge. Place baking dish in the freezer and remove the vanilla ice cream.
  3. Place ice cream on the counter to soften for about 15 minutes. Scoop vanilla ice cream into a large bowl. Stir in 1 cup chopped toffee bits. Spread ice cream toffee mixture over fudge layer. Return to freezer for 4 hours or until frozen solid.
  4. Warm remaining 1/4 cup fudge. Drizzle fudge over the top of the ice cream cake and sprinkle remaining 1/2 cup toffee over the top of the cake. Return to the freezer for 30 minutes or until ready to serve.
  5. When ready to serve, carefully lift brownie ice cream cake from the baking dish using the parchment paper and place on a serving dish. Cut into squares and serve.
