Happy Saturday! I’m still reeling and full of excitement from the events of last weekend. I just can’t wait to tell you all about it! So let’s just launch right in, shall we? First, Madelyn had her first day of ballet! It’s all too cute for words. I can remember when HB was little and started ballet also. That seems like a million years ago now. Maddy really loved her first day of prancing around with the other girls. I thought she might be shy or get clingy but when I said I was going to be sitting in the waiting room, she only said “Okay. Bye Mama!” I was so happy to see that she was outgoing and talkative with the teachers and the other girls. She loved every minute of it and she’s so excited to be going back again this morning.
As you’ll recall I’ve been talking about my running endeavors for just over a month and a half now. I had started out running barely able to run a quarter-mile. Oh, I could do it but it was a miserable experience and at the end of that quarter-mile, I could barely breathe. I felt like I was going to keel over and die. After a run my knees would be on fire from tendonitis and my ankles would hurt. Flash forward 6 1/2 weeks later to last weekend.
Last weekend was the date of the Red Faced Runners 5K which I had signed on to be a part of. As Sunday morning arrived, talk about nervous! I laced up my shoes and told myself, I’ll just run as far as I possibly can. I’m going to pace myself but push myself also and just see what I can do.As I left the house, I told Mike I was sure I’d have to stop at least once or twice but that I was going to run the distance to the best of my ability. He wished me luck and off I went. I plugged my earphones in and turned on my tunes. Music has a power over me, especially when I’m running. It’s the thing that drives me and keeps me putting one foot in front of another sometimes when I truly think I can’t go any further. I’ll tell myself, just run until the end of this song.
As I ran, I was using an app that would check in every 5 minutes to let me know where I was in my run. At one point, the voice came on and informed me I had run 1.67 miles! At that point, that was officially the longest distance I had run without stopping since I began running. But that wasn’t my first thought when I heard that number. I thought, “Wow! I’m more than halfway done!” So I just kept running. The next check came in at 2.03 miles and I heard myself say, “Only 1 more mile to go. YOU’VE GOT THIS!” At that point, I knew that not only was I running a 5K but I was going to run the entire distance without stopping. And I did!!My red running face after running 3.1 mile for the very first time!
I couldn’t believe it. That moment when I finished I was elated, surprised and ridiculously proud of myself. I’ve come a long way in a short period of time. I’m so amazed by what my body can do with training, commitment and the drive to succeed at something. I never in a million years thought I would be able to call myself a runner. Through my whole life I’ve exercised in some way but I’ve never run. I couldn’t stand it and thought there was no way I could do it. I love that now I’ve proven myself wrong. The best part of the whole thing though? My own personal finish line!
Because it was Maddy’s first day of dance and I just couldn’t miss her very first class, I wasn’t able to participate in an organized race. So when I arrived home, Mike had created a finish line for me and even had a cooler with water in it waiting for me. Man, I love him! This accomplishment is now fuel on the fire. Now I want to do more! I want to run farther, faster and you better believe that I will be attempting Tough Mudder next fall. With the addition of CrossFit to my fitness regimen, I’ll be ready to conquer that event when the time comes. In the meantime, I have my first actual organized race on the 30th of this month and now I’m pumped! I can’t wait to see if I can run it in better than 37 minutes which is how long it took me last weekend. So enough about running, let’s talk food! Let’s talk about the things I made this week and then begged someone else to eat so that I wouldn’t devour it all so that I could become a better runner. (Holy run on sentence, Batman!)

Butternut Squash Mac & Cheese from Knead to Cook: I saw this come across Facebook and knew I needed to give it a try. I’ll be making this for dinner one night this week! Pasta with a thick, creamy butternut squash puree, herbs and a touch of cheese. Yum!
Peach Cupcakes from Taste & Tell: These cupcakes are simply gorgeous! They look so fresh and like they would be biting into summer with each nibble. This is a must make before peaches become scarce.
Scuppernong Granola Bites from Cafe Terra: So initially this title pulled me in for sure. What the heck is a “scuppernong?” I learned it’s actually a kind of grape! Who knew? Probably some of you, but definitely not me. From there I wanted to make these granola bites even more. Healthy and interesting too!
