Salted Browned Butter Butterscotch Chocolate Chip Cookies & A Giveaway!

I have to tell you about my latest obsession. When I use the word obsession, I kid you not!! This is no understatement. I am utterly in love with Zeke’s Butterscotch. A few months ago I received my monthly Foodzie box. One of the items in the box was this incredible real butterscotch. Their butterscotch has this rich, deep flavor that will keep you coming back for more and more. It’s truly become an addiction.

They only use natural ingredients. Pure Hawaiian cane sugar, butter, unsulphered molasses and apple cider vinegar. Pure and natural. When your butterscotch arrives, it arrives with instructions. Suck, don’t chew. Unless you have a lot of faith in your chompers. If you truly want to enjoy this butterscotch you should suck on it and let it warm in your mouth to get all that juicy, buttery flavor.

So in addition to eating it straight out of the bag and then having to reorder a lot more, I decided this butterscotch needed to make its way into something else. I want to eat this stuff in everything! HB is forming her own raging addiction to Zeke’s Butterscotch as well so we were talking about all the wonderful things that could be enriched by this fantastic candy.

We decided to see what my favorite cookies would taste like with the addition of a little Zeke’s Butterscotch. Holy cow! These cookies are a salted browned butter chocolate chip cookie. The butterscotch elevated my favorite cookie recipe to something beyond addictive! What you get is a chewy, buttery, chocolatey cookie creation.We couldn’t stop eating them! It was so bad, I had to take them to work just to get them out of the house. At work, they disappeared in a very short time. People are still talking about them 2 days later. Yes. They’re that kind of cookie.

Salted Browned Butter Butterscotch Chocolate Chip Cookies

2 sticks of butter

1 1/4 cups dark brown sugar

2 eggs

1/2 Tablespoon vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon fleur de sel

1/2 cup mini semisweet chocolate chips

1/2 cup Zeke’s butterscotch, very finely crushed (or another hard butterscotch candy but it just won’t be the same)

– Preheat your oven to 325 degrees. Line a baking sheet with parchment paper.

– In a small saucepan, melt the butter while swirling it gently. Once the butter has melted, it will start to boil and foam. Stir it every now and then and watch it carefully. The color will begin to change and little brown bits will form around the sides and on the bottom of the pan. Once the butter has turned a golden brown, remove from heat and transfer to a bowl to cool.

– In a medium bowl, mix the sugars, the browned butter, eggs and vanilla.

– In a large bowl, mix the flour, salt and baking soda.

– Add the wet ingredients to the dry ingredients and combine until moistened.

– Fold in the chocolate chips and butterscotch.

– Form two long “logs” from the dough and wrap in plastic wrap. Chill for 2 hours.

– Cut off 1/4 slices and roll into a ball. Repeat until you have your first batch. Place balls on prepared baking sheet about 2 inches apart. Keep remaining dough in the refrigerator until ready to use.

– Bake for 10-12 minutes. Allow the cookies to cool on the baking sheet for 5 minutes. Cool completely on a rack. Allow the baking sheets to cool before putting next batch of dough on.

– Enjoy!
