When it comes to healthy eating, sometimes it’s difficult. When we’re all on the go, there are times when we reach for something quick and perhaps not so healthy. Maybe we think we’re making a healthy choice but look deeper and you’ll see that “healthy” frozen meal is highly processed and filled with unpronounceable ingredients. No bueno!

I try to cook dinner for my family from scratch every night. Lunches are homemade as well however, there are plenty of times when that mid-day meal comes around and I’m the one reaching for something that trades nutrition for convenience. Recently, I was asked to give Veestro meals a try. I was excited to give them a try knowing they would fit seamlessly into my busy day.

My delivery arrived frozen solid, packed in dry ice and my freezer was ready to receive them. When I tried my first meal I was immediately enamored with my little frozen meal. A quick look at the nutrition label and you’ll see why I was so happy. Not a single ingredient that I don’t always have when preparing fresh meals at home. Wholesome, nutritious ingredients like tomatoes, peppers, spinach, olive oil, garlic and cumin. Nothing strange. Nothing that I needed to Google to figure out what it was.

Now it was time to get down to the eating! I am not vegan or even vegetarian but I do enjoy eating plant-based meals often and make sure that many of our meals each week are meatless. The first thing I tried was the Red Curry with Tofu and Vegetables. As I heated it up, I was amazed by just how wonderful it smelled. The best part is that not only did it smell wonderful, it tasted incredible too which made me excited to try all the other meals. Tofu in red curry with broccoli, carrots and cauliflower over brown rice definitely left me satisfied.

Each meal I tried was hearty and filling. Many were so filling, I had leftovers. But truth be told, they all tasted so good I wanted to finish them. Tofu scramble with beans, veggies and spices inside the flavorful Breakfast Burrito was a great start to my day. The Enchilada Casserole was my favorite by far! I would order more than one of those each time because it was ah-mazing! The verdict on Veestro is that it’s outstanding. Healthy food that’s convenient to prepare and tastes out of this world.

So many amazing options! I’m interested in the eggplant lasagna, three layer scramble, golden chickpea stew, vegetable bean soup, and spanish torta. They all sound so delicious!
