Hello all! Hope everyone had a fantastic week and you’re gearing up for a great weekend too. Perhaps some relaxing or a day at the beach? That’s part of my plan for the weekend, some baking today (kids permitting) and tomorrow we plan to head down the shore with some friends of ours and their children.

We actually went down to Point Pleasant with Maddy and Molly on Monday. What a great day! Fortunately, it wasn’t too overly crowded. I’ve been wanting to take Maddy to play mini-golf. She has her little set of plastic clubs here at home and I thought she would love playing on a “real” course. She loved it for about a hole and a half. So that was short-lived.

Next we were off to the aquarium which was actually our original destination before I got that mini-golf brainstorm. Now this was right up our alley. Mike always makes fun of me because I always take a million pictures of the fish no matter how many times I’ve been to the aquarium.

I just love fish and underwater life. It’s beautiful and fascinating to me. Maddy really enjoys aquariums also. This was Molly’s first trip and fun was had by all.

We were going to head home but instead we detoured a little further down the boardwalk to let Maddy go on some rides. She took her first solo ride! She’s getting too big, too fast. I wasn’t sure how she would react once the ride started going but she had a blast! I’m so glad she didn’t freak out and try to bail. Even Daddy got to go on a ride. What a great day of making memories!

Red Currant Yogurt Cakes from CrumbThis is a “new to me” blog that I just adore. First, love the name!! Second, these red currant yogurt cakes are simple and simply gorgeous. I’ve actually never tasted currants but these little cakes make me want to.

Spaghettini with Shrimp, Tomatoes & Chile Crumbs from Cook That BookJasmine tried out the July cover recipe from Food & Wine magazine. This pasta dish seems to embody summer with all its fresh, flavorful ingredients. Fresh tomatoes and basil. Sourdough breadcrumbs with lemon zest and red pepper flakes. I need to dig out my July copy of Food & Wine magazine!

Black Forest Pancakes from Closet CookingThis is another “new to me” blog that I’ve fallen in love with. There are a ton of recipes on this site that I will be bookmarking. But these incredible pancakes with tons of cherries, chocolate and whipped cream were my first impression and man oh man, they certainly made an impression!

Fire on Ice Soup from Cookistry: I had told you all about the Fire on Ice recipe contest from Marx Foods last week when I made my Mango Habanero Popsicles. Well here’s another entry into that recipe contest that I’m dying to try. A cold soup duo of potato and squash soups and a pepper puree that spices things up. Donna even made the soup look like flames and icicles! Such a unique and creative recipe.

Love the family pics! I don’t think my daughter’s attention span would be much longer for mini golf 🙂
