Happy Saturday! Hope you all have had a fabulous week and are settling in for a warm, relaxing weekend. Things have slowed down since last we spoke (fortunately.) We’ve enjoyed sunny days filled will splashing in the little pool. As plenty of rainy days have rolled through, we’ve made the best of those too!

Girls rain 1As I’ve mentioned recently, I’ve been enjoying yoga. Turns out the girls like yoga too! I found some videos and they’ve been having such a great time practicing downward dog and cat and cow. Almost every morning they ask if we can do yoga! Love it.

get-attachment.aspxOn another note, I have a new favorite recipe for you healthy eaters out there. This Paleo Sausage and Cauliflower Rice Recipe is insanely good no matter what dietary plan you follow! I made it for the first time a few weeks ago and now it’s in our steady weekly rotation of recipes.

Paleo Italian Sausage with Cauliflower RiceDo you know about cauliflower rice? Oh. My. Goodness! So good! Cauliflower pulsed in a food processor to the size of grains of rice. In this particular recipe the cauliflower then gets a touch of pesto, fresh spinach and served with Italian chicken sausage on top. I like to add a can of petite diced tomatoes to my sausage but other than that, this recipe is perfection just as its written. So flavorful and hearty!

Normally we’re just popping in for some dog food for Mr. Murphy but that errand is always a leisurely one as we visit with the cats, fish and other animals. Molly made fast friends with a rat there and now continues to try to convince me to take him home. Um … I don’t think so, kiddo.

get-attachment-6.aspxIn other news, I had a 2-second claim to fame when I was approached by Ladies Home Journal to participate in a fun question/answer session. We were asked what would be do if we won a million dollars!

Awww.. thats really nice what you said in the magazine article. The cauliflower recipe sounds delicious and as for Mr. Rat, I would also opt out, not in my home.

Oh my goodness, that cauliflower recipe is SO good! My husband is such a picky eater and he has two servings every time I make it. And no, Mr. Rat will just get weekly visits from us 🙂 Good enough for me!
