Good morning!! Well don’t you look bright-eyed and bushy-tailed? How’s everything? Hope you all had a good week. Last weekend I was telling you all about King Arthur Flour Blog & Bake™. This week I have no more gallivanting or great adventures to tell you about. This week was just plain ol’ normal, boring life. I exploded a spaghetti squash this week. So there was that. Usually I bake them in the oven but I lost track of time one night and dinner needed to be on the table in 30 minutes so I decided to try cooking that sucker in the microwave. Somewhere around the 13 minute mark … Boom! Strands of squash everywhere.

Spaghetti Squash Mess 1Fortunately the majority of the squash was salvageable and we had it with a quick, chunky homemade tomato sauce. No sooner had I cleaned the microwave, Molly was at the ready with a second explosion for me to clean up.

Spaghetti Squash Mess 2This week it became official, Maddy is enrolled in preschool! How is this even possible that she’s already old enough to be going to school? It’s all going to fast. I’d like to freeze time now, thank you. She’s super excited and now for the next 3 1/2 months I’m almost positive there will be twice or thrice daily conversations that go something like this.

Maddy: Do I go to my school today?

Me: Not today, Sugar. After the summer is over it will be time for school.

Maddy: Is summer done yet?

And so on and so forth. This will be my life for the entire summer. That and asking when we can get a new backpack. Good times! But seriously, I’m happy that she seems so enthusiastic about going. Although this morning she realized that we won’t be at school with her so there was a tearful conversation about that. I tried to reassure her that she would be having waaaay too much fun. I reminded her she would be playing, learning to read and they even have cooking class for the kids! To each Maddy replied, “But, I’m gonna miiiiiiiss yooooou!” Man, I love that kid.

So that’s been my week. See? Boring but I did have some scrumptious goodies baked up for you this week! As always, you’ll have a recap of that below and a few exceptionally wonderful recipes I bookmarked this week that I thought you might like too! Well, I’m off to shuffle my 3 girls to a soccer game now but then tonight I get some much needed one on one time with HB for a girls night out so really looking forward to that! Hope you have a fabulous weekend!

PS… Murphy is getting SO big! He’s 6 months old now. I don’t think he’s going to be huge but he’s still growing up so fast. Just like the other kids around here.

Balsamic Vinaigrette Potato Salad from Jelly Toast: You know I’m a sucker for anything with balsamic vinegar in it and I’m also a sucker for potatoes. I’m talking serious addiction. I am Irish so it’s kinda in my genes. Yes… let’s blame the genes. Whatever the reason, I am IN LOVE with this lovely potato salad.  Herbs, mustard, white balsamic… it’s just perfection and I cannot wait to make it.

Caramel Latte Bundt Cake from The Baker Chick: In addition to knowing how I love balsamic vinegar, it’s no secret around here that I kinda have a thing for bundt cakes. This one though, this one blows all of mine out of the water! Coffee-flavored cake with cappuccino chips baked in and not one, but two glazes!! This is my kind of cake. And it’s breath-taking! Go!! Take a look! 

Mounds Layer Cake from Confessions of a Cookbook Queen: This needs to happen in my kitchen!! I’m talking about layers and layers of decadent chocolate cake filled with coconut, finished with coconut frosting and the most gorgeous sheen of poured ganache I’m ever laid eyes on. Another one that honestly, you just need to lay your eyes on it.

Southwestern Quinoa & Black Bean Casserole from Pinch of Yum: I adore quinoa so I’m always looking for interesting ways to incorporate it into our diet. This casserole sounds like it packs a huge, flavorful punch with amazing southwestern flavors and a sprinkle of cheese. Can’t wait to make it this week!

oh dear, the ol’s spaghetti squash explosion! my brother did that with an egg. Blew the door off, ha ha! At least you salvaged it!

Oh my goodness, isn’t that just the truth? I loathe the task and even more so when it’s due to an explosion.

Oh boy, glad the explosion did not completely obliterate your spaghetti squash! It si so cute when they are excited about school…I miss those days! But they still get excited about ice cream so I still have that. LOL 😉
