Happy Saturday all! I hope you all enjoyed your Easter and Passover. In our family, lots of fun was had by all. Our day started off with a brunch at my father‘s house followed by dinner at my in-laws house. You know what that means? Double Easter Egg hunts! Whoo hoo! It’s funny because when I asked what my favorite holiday is, chances are I will either respond Halloween or the 4th of July. I adore both those holidays but then comes Easter and I’m reminded of how very much I love it.

Spending the entire day with my family in such a relaxed way makes it such a stress-free holiday. The weather is usually pleasant, sunny and much of the day is spent outside. I am a huge fan of hunting for eggs. My father is amazing at hiding them. There are always plenty of easy ones for the little ones but there are a ton of really difficult eggs to be found. Our hunt this year lasted an hour and a half! I couldn’t believe when I saw the time and realized how long we had been hunting for Easter eggs.

And Murphy loved being outside for his first Easter too! He’s nearly 5 months old now and doing wonderfully. He’s such a good dog!! I can’t get over how sweet and gentle he is with the girls. He’s so well-behaved and smart too. He’s just brought us so much joy since we brought him home.

At the end of the day, everyone was all tuckered out and ready to collapse. Both Maddy and Murphy did just that and by 5:30pm, Maddy was actually asking me to go home. It was a wonderful day!

Onto the day after Easter, Day 1 of the 30-Day Green Smoothie Challenge! Remember I was telling you all about it last weekend? Well, April 1st marked Day 1 and my first ever green smoothie. My first impression was, “Oh I don’t know about this.” Drinking my first green smoothie was a textural adventure. That’s when I realized, I probably needed to thin in out a bit more. Once I did, I was hooked!! Seriously folks, I feel like I’ll have no issue completing the 30-day challenge and I’m hoping to make this a healthy daily habit even after.

I’ve made smoothies with spinach and kale, sweet potatoes, mangoes, strawberries, blueberries, almonds, pears… all sorts of goodies! And they all taste amazing! It’s been almost a week and I feel like I have more energy. I feel like I’m doing something incredibly healthy for myself and what’s even better? Turns out Molly likes green smoothies! Her favorite so far is a mixture of kale, pears, banana, almond milk and a dash of cinnamon. This is wonderful news because I have no luck getting her to eat green vegetables. Now I feel like I’m doing something incredibly healthy for both of us. Sadly, Maddy won’t give it a try. Maybe she’ll come around.

Oh and speaking of Maddy… Maddy started playing soccer this week! She had her first practice this week and today is the official start of the season. There will be an opening day parade and ceremony. During her first practice she just pretty much ran around kicking the ball, paying no attention to any of the other kids or the coach but she had a blast. To me, that’s all the matters. I just want her to have a good time. So today I’m hoping for warm weather as we watch our little girl and her teammates celebrate their first season as soccer players!

photo_1-4-3And get this!! In only 2 short weeks I will be attending Blog & Bake at King Arthur Flour’s Baking Education Center in Vermont!! You can read all about what the experience will entail HERE. I cannot wait!! 15 bloggers will spend 3 days baking and learning from the best. I am beyond thrilled to be a part of such an amazing event. I’ll be sure to tell you ALL about it when I get back. The next 2 weeks can’t go by quickly enough. Carrot Cake with Brown Sugar Cream Cheese Frosting from Spiced: I love carrot cake but I especially love this version for the addition of a brown sugar cream cheese icing instead of plain ol’ icing plus, the cake has a gorgeous batch of chopped toasted walnuts pressed into the sides of this lovely cake. The finishing touch that makes this cake even more special? The adorable piped carrots on top that are so easy to make! This cake must be baked in my kitchen.

Thai Coconut Curry Soup from Perry‘s Plate: After all the brownies and cake, I’ll be making this lovely curry chicken soup. Chock full of flavorful spices, chicken, spaghetti squash and any number of garnishes, this soup definitely looks like a winner in my book! I can’t wait to try it.

The kids are so cute and Murphy is getting so big. Looks like everyone had a great time! One of my friends attended the King Arthur bake event last year and said it was amazing! Have a great time and look forward to reports from you and pics of what you made.

Thanks Suzanne! I can’t wait for Blog & Bake. It’s going to be amazing!! And Murphy is growing in leaps and bounds. He’s doubled in size in the 2 months we’ve had him. And he’s SUCH a sweet pup! We just love him to pieces.

Your girls are precious! I love the idea of the green smoothies…this is a great time to year to start working on being healthier. I think I will try to do the same! Right after we finish the Easter candy, that is… πŸ™‚

Ha!! Easter candy sure is hard to resist. I sent a giant bag to work with my husband just to get it out of the house. The amount of candy my girls got from their uncle and both sets of grandparents was ridiculous!! It looked like Halloween instead of Easter πŸ™‚ And thank you! They are cutie pies, but I’m biased.
