Happy Saturday all!! I have lots to share with you today so grab a cup of java and settle in for a nice relaxing read. Did you have a fantastic week? Was it warm where you are? Here in New Jersey, we were blessed with two incredibly warm days. We went from 40’s-50’s to having two 80 degree days. What?!? Is this April or June? Clearly Mother Nature is still a bit confused but I’ll take that confusion over 20 degrees and snowing in April. Bring on the warmth!

The girls and I took full advantage of the unseasonably warm weather and spent pretty much all of those two days outside. Our days were spent in the park, at a small zoo and in our back yard. It’s funny how you hardly see your neighbors except in passing during the winter months but once a few warm days arrive, poof! Everyone begins to re-emerge. It was nice to be able to catch up with a few of the people in our neighborhood that we hadn’t seen in a while. Murphy just loved lounging in the sun and soaking it all in.

Even the ice cream truck is back in business! The moment the temperature got even mildly warm they were ready to be back to making a buck. I love the ice cream truck because the girls get so very excited the moment they hear that music playing in the distance. They hurry to shove their little feet into shoes simultaneously asking for money and hurrying out the door. I can remember that same excitement. Heck, at work when we hear the ice cream man coming you’ll see all the paramedics and firefighters scrambling out the door just the same way! Some things you just don’t outgrow.

In other news, today marks Day 13 of the 3o-Day Smoothie Challenge and I’m still going strong! Woot! (Fist pumps) I am loving it actually!! Despite my initial skepticism that I may not be able to go the distance I now have no doubt that I’ll make it the full 30 days and then some. I’m pretty confident that this will just be my new style of eating. I love incorporating the smoothies into my day and look forward to drinking them. I feel like I’m pumping such good stuff into my system! Probably much better than any breakfast or rushed lunch I might eat normally.

Some days I would get busy and not eat at all or snack on less than healthy things throughout the day. The green smoothies take the guesswork out of at least one meal per day and ensure at least one very healthy snack. This week I started adding other greens into the mix other than just kale and spinach. I used arugula and loved it! It gave the smoothie a slight peppery taste that was oh so pleasant. I also experimented with chia seeds this week and I can’t wait to share my creation with you! Hopefully soon but next week is a busy busy week around here so it may have to wait a bit. This week I had an experience that left me with mixed emotions. I was excited and happy yet a little sad at the realization that Maddy is growing up WAY too fast. All my girls are. This week we started looking at preschools for Maddy. How is it even remotely possible that she is going to preschool already?? I just don’t know where the time goes. HB‘s nearly finished with her first year of high school. It feels as though it wasn’t that long ago that I was taking her to her first day of preschool. So, this search is a little bittersweet. Maddy is SO ready for school though. She’s been talking about going to school for 6 months now after our neighbor’s daughter started preschool. She walks around with her little backpack. She’s ready for it. Now I just need to get ready for it.

And today I have some info for all you Jersey peeps, I thought you might like to know about an opportunity for some FREE GRUB!! Yep, free food is always a plus in my book and you can get some next weekend! Smashburger is opening its newest location at 975 Route 1 South in North Brunswick.  The North Brunswick menu will include regional favorites like the New Jersey Smashburger – 100-percent Certified Angus Beef burger topped with applewood smoked bacon, blue cheese crumbles, grilled onions, haystack onions, lettuce, tomato and mayo, served on an onion bun.  Its Best’s Hot Dogs are made with New Jersey’s famous Best’s Beef brand hot dogs, and are available in a regional version – the Jersey Dog topped with sauerkraut and spicy brown mustard.

Smashburger

The opening will take place on Monday, April 22 at 11:00am. In advance of its official grand opening, Smashburger will give away FREE burgers from its pre-opening menu, on a first come first serve basis, on Saturday, April 20 from 11:30am to 1:30pm and 5:30pm to 7:30pm. Want more? Smash fans lined up before the official grand opening on Monday, April 22 will be entered into a drawing where 100 people selected at random will win one FREE Classic Smash™ per month, for 13 months.  Participants can begin lining up outside of the restaurant on Monday morning at 9:00am.  Winners will be selected at 10:45am before the doors officially open at 11:00am.

This is one of those things you need to feast your eyes on. Lovely ripe peaches dripping in butter caramel topped with a golden crust. MUST!! When I first saw them on Google+ this week I had no idea that they were gum paste. I thought they were real. Stunning I tell ya! 

Glazed Strawberry Biscuits from Buns In My Oven: These little beauties just look like they’re summer in a biscuit. Bursting with fresh strawberries, I would have to eat them still warm fresh out of the oven. These will be something that I absolutely must make. And soon!!

Banana Cream Chia Pudding from Vegan Yack Attack: After experimenting with chia seeds a bit this week I’m now officially on the lookout to see how I can incorporate them into my diet. This chia pudding with coconut milk and bananas looks like a great way!

Yay for you for sticking to your Smoothie Challenge! I love smoothies! I always feel better about myself when I have one a day as a meal replacement. I need to get back on that plan. Summer is coming!

Thanks for the support Meghan! I have never even had a green smoothie before this challenge and I’m loving them. I feel pretty confident that even after the challenge I’ll still drink at least one daily. Yum!

Looks like a great week. Love that you got to enjoy the nice weather. It’s freezing here, Canada seems to be having another cold snap.

I like the cold to a point and Canada is just gorgeous but I don’t think I could live there. Way too cold for wimpy ol’ me 😉 And that popcorn is amazingly delish!

I’m so intrigued by this Smoothie Challenge! I’ve been thinking of starting one myself- I usually have at least one smoothie a day, anyway. Can’t wait to hear your final verdict.

Well, it’s 2 weeks in and I’m loving it! I’m currently drinking two per day for the challenge but I see this becoming a healthy daily habit even after this month.

I’m been swamped; work, new home build, daughter’s health…I’m missing a lot and you’ve made me most aware of it here…new DOG?

I just love dogs…all of them. Even my old cantankerous girl…but when she’s gone I say I’m done and then see a puppy and I’m not so sure! Your dog is adorable; almost as cute as your girls!

Yes!! We did get a new dog!! He looks so very little in this post. He’s grown so much now! He’s nearly a year old now. He’s such a wonderful addition to our family and so sweet with the girls.
