Happy Saturday everyone!! Hope the week was good for you. I don’t know what the weather is like where you are but supposedly here in New Jersey it’s spring. It certainly doesn’t feel like it! Mother Nature seems to be a little confused. It’s been in the 20’s and 30’s one day then nearly 50 degrees the next. The other morning I posted this picture on Instagram on my way into work. Note the lovely clear sky,  the temperature was actually pretty mild and you can’t even tell that I’m in a really urban, ghetto city. Ahh, the early morning light can mask so much.

Flash forward 12 hours later, as I’m going home. Ugh! The temperature plummeted and this snowy wintry mix was tumbling down on us. Had I taken another picture 10 minutes later you wouldn’t have been able to see the street. Fortunately it didn’t amount to much more than an inconvenience on the way home from work that night.

So get this!! My Rainbow Roasted Potato Salad has officially made it to the FINAL ROUND of Munch Madness!!! How cool is that? So now it’s time to take the win. In other news, Molly learned that she can make some silly faces this week and was cracking herself up. We practiced together. She also learned to say the word “more” and now is using it constantly, for everything! It’s all very cute.

I took Maddy and Molly to a music and play class for small children. Usually Maddy is pretty shy when she’s thrust into a new situation but that particular morning, it was Molly  who was uncharacteristically shy and clingy. When Molly warmed up a little, Maddy took the lead and showed her that there was nothing to be nervous about and that her big sister would take care of her. Within a few minutes after this, Molly took off and was playing with all the other kids.

Murphy is growing in leaps and bounds! I have been worried because I feel like he doesn’t eat very much, only about half of what I give him at each meal and he’s very lean. I took him to the vet two days ago for his last round of vaccines and his rabies shot. When they put him on the scale I was amazed!! In the last month he gained 8 pounds!! I guess he’s just eating what he needs and clearly, I have nothing to worry about. He’s healthy, happy and doing so well.

Balsamic Glazed Brussels Spouts with Bacon & Onion from Jelly Toast: Bookmarked this week and made! So, brussels sprouts and I have a long standing loathing of each other but I decided to give them another chance. I haven’t had them in many many years and the idea of adding two of my favorite things, bacon and balsamic, seemed like a win. Was it ever!! I wouldn’t say I’d sit down and eat them like a bowl of ice cream but I definitely enjoyed brussels sprouts this time. Turns out if I roast brussels sprouts with bacon and onions, I actually them! So happy Emily’s recipe showed me how good these little suckers could be.

Rainbow Fruit Cookie Cake from I Am Baker: You need to feast your eyes on this! It’s bright, colorful and just simple genius. Sugar cookies, cream cheese icing and tons of colorful, gorgeous fruit.

Mini Ziti with Sun Dried Tomatoes & Artichoke Hearts from Persnickety Plates: I have a love affair with sun dried tomatoes. Add pasta and artichoke hearts, it’s a perfect simple meal in my eyes. This simple pasta dish sounds light, flavorful with lemon pepper and will be on my menu this week.

What a lovely week! I’ve had enough of Mother Nature’s split personality. Where’s spring? Congrats on making it to the final round of #MunchMadness! You’ve got this in the bag!

No spring in Chicago yet…but I’m feeling very blessed the Sunday Snow Storm was south of us. I think I would’ve totally lost it if I had shovel again…and no one like a crazy lady with a shovel.

Thank goodness you avoided more snow! It’s actually snowing here in NJ today AGAIN 🙁 Just a cold, wet mess that won’t require a shovel but I’m thoroughly annoyed.
