Breakfast is my second favorite meal of the day and if done up right, it firmly takes the first place spot because breakfast can be absolutely awesome! Sure, it gets mundane in the every day. Bowl of cereal, perhaps a muffin or a smoothie to go. But if you have the time, breakfast is amazing. One of my favorite breakfast meals is most definitely pancakes. These Sweet Cheddar Pancakes with Apples & Bacon are the absolute epitome of why pancakes are so awesome.

Pancakes are versatile. We can go classic buttermilk or we can get fancy with fluffy Lemon Ricotta Pancakes with Fresh Blueberry Sauce. Add fruit, chocolate chips, whatever your heart desires! This week, my heart desired cheese. Kerrygold Skellig sweet cheddar makes buttermilk pancakes something extra special. You all know by now how much I love cheese and fruit together so adding apples with that sweet cheddar cheese seemed oh so fitting. Those two flavors were a match made in heaven!

Last, what’s breakfast without some crisp, smoky bacon? I threw crumbled crispy bacon right into the batter. Once those golden pancakes hit your plate and you dig in, each bite is the perfect bite of sweet, savory and smokiness. Breakfast was definitely my favorite meal of the day this day!

Yield: 18 servings

Sweet Cheddar Pancakes with Apples & Bacon

Fluffy buttermilk pancakes with crispy bacon, Kerrygold Skellig Sweet Cheddar and tart apples. Served warm with maple syrup and breakfast is the best meal of the day!


  • 1 1/2 cup all-purpose flour
  • 4 tablespoons granulated sugar
  • 3 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 1/2 cup buttermilk, room temperature
  • 3 tablespoons Kerrygold unsalted butter, melted
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 8 slices crispy bacon, coarsely chopped
  • 1 cup coarsely chopped apples
  • 1/2 cup shredded Kerrygold Skellig Sweet Cheddar Cheese


  1. In a large bowl, whisk together flour, sugar, baking powder and salt. Set aside.
  2. In a medium bowl, whisk together buttermilk, Kerrygold unsalted butter, egg and vanilla extract.
  3. Add the wet ingredients to the dry ingredients and stir just until evenly moistened. Do not over stir. A few lumps are okay.
  4. Gently fold in the bacon, apples and Kerrygold Skellig.
  5. Heat a skillet or griddle over medium heat. Pour batter by 1/4 cup onto preheated skillet. Cook 2-3 minutes per side until bubbles have formed on the surface of the pancake. Carefully flip and continue cooking for another 1-2 minutes. Serve warm with maple syrup.
