Summer Squash Swirls -

Fun in the summer means we are spending most of our time outside. That means we’re doing everything outside, including eating! Sometimes that’s grilling out on the deck while other times it’s a picnic in a park. No matter where you’re dining al fresco, these Summer Squash Swirls are the perfect addition to the menu.

Summer squash grilled until tender. Grilled summer squash is a wonderful side dish all by itself. But I whipped Kerrygold Dubliner Spreadable Cheese with sautéed garlic, shallots and herbs. Then I spread that deliciousness onto the grilled summer squash and rolled them up into one bite perfection. This is an easy side dish or appetizer that can be made ahead of time for easy transport to the summer party, picnic or just out to the backyard for family dinner. Light and flavorful, these Summer Squash Rolls are sure to disappear quickly.

Summer Squash Swirls

Yield: 8-12 servings

Summer Squash Swirls

Grilled summer squash filled with a garlic herbed cheese spread for an easy summer appetizer recipe or side dish



  1. Heat grill to medium-high heat and brush grates with olive oil.
  2. Season squash slices with salt and 1/4 teaspoon ground black pepper. Grill squash slices about 1-2 minutes per side until tender and slices have grill marks. Cool completely.
  3. In a small skillet, melt butter. Saute shallot and garlic until tender and golden. Cool completely.
  4. In a small bowl, beat together Kerrygold Spreadable Dubliner cheese with cooled shallot garlic mixture, parsley and remaining 1/4 teaspoon black pepper.
  5. Spread small amount of cheese mixture onto cooled grilled squash slices and roll up. Secure with a toothpick. Repeat with remaining squash slices and cheese. Refrigerate until ready to serve.
