As summer makes its arrival, it brings with it summer fruit and berries. For me any season is really all about food and what’s in season. Raspberries, peaches, cherries, blueberries and strawberries, I love them all. This easy to make Summer Berry Ice Box Cake recipe captures all those lovely summer fruits.

Whipped cream paired with strawberries and blueberries is always a crowd pleaser. At least once or twice each summer I make a Summer Berry Trifle that is simple summer tastiness. Angel food cake, whipped cream and summer berries. For this Summer Berry Ice Box Cake layers of frozen fruit whipped cream and vanilla cookies are topped with fresh fruit  for the perfect frosty summer treat.

Summer Berry Ice Box Cake

6 hours, 20 minutes

Summer Berry Ice Box Cake

An easy to make berry icebox cake filled with vanilla wafer cookies and topped with whipped cream and fresh fruit.

Ingredients

  • 3 cups heavy cream
  • 4 tablespoons sugar
  • 1 tablespoon vanilla extract
  • 1/2 cup Naked Powder Garden Berry Veggie
  • About 20 vanilla wafer cookies
  • 6 strawberries, sliced
  • 8 blueberries

Instructions

  1. In a large bowl, beat together heavy cream and sugar on medium speed until stiff peaks form. Add vanilla extract and beat just to incorporate. Reserve 1 cup of whipped cream and set aside in the refrigerator.
  2. Gently fold Naked Powder Garden Berry Veggie juice into remaining whipped cream.
  3. In an 8-inch springform pan, spread 1/3 of whipped cream mixture over the bottom. Top with one layer of vanilla wafer cookies.
  4. Spread half of the remaining whipped cream mixture gently over the wafer cookies. Top with another layer of vanilla wafer cookies. *You may have cookies leftover or may need a few more depending on the brand you choose to use.
  5. Gently top with remaining whipped cream mixture. Freeze at least 6 hours or overnight.
  6. When ready to serve, let cake sit at room temperature for 10 minutes then release and remove sides of springform pan. Top with reserved 1 cup of whipped cream. Arrange strawberries and blueberries decoratively on top of whipped cream.

Tis is such a cool idea! I love how its not tons of cake, but actually tons of whipped topping! Sounds like a fun and different dessert I will surely try this summer!!
