Strawberry Peach Quinoa Salad

Strawberry Peach Quinoa Salad -

Quinoa is one of my favorite foods. It’s healthy and a blank slate that works when added to almost anything. These quinoa burrito bowls are ridiculously good! I love having a side of tomato feta quinoa with grilled chicken especially in the summer. Or how about the sweet side of quinoa? My love affair with apple pie quinoa started there. Apples, cinnamon and brown sugar with protein-filled quinoa is the way to start any day. With this strawberry peach quinoa salad I decided to head over to the sweet side once again and I’m so glad I did!

This salad is ah-mazing! I know you’re going to love it as much as we did. Summer’s best fruit is tossed with a touch of honey, lime and fresh basil. Because fruit and cheese are natural companions, a little goat cheese never hurt anyone. A handful of crumbles lends creaminess to this strawberry peach quinoa salad and just melts right into it to add a little savory to this sweet quinoa salad.

With the loss of my computer also came the loss of the stunning pictures I took of this salad for you which makes me thankful for my Instagram account where I had one picture of this incredible salad. This is too good not to share with you! It’s perfect for breakfast, a light summer lunch or even dessert! No matter when you choose to enjoy it, you’re sure to love it.

This sounds like a flavor explosion, I bet adding some nuts would give it a great crunch!

Aww, thanks Barb! At some point I hope to remake it and snap some pictures to replace these but for now, too tasty not to share.

I love fruit with savory elements in the summer… it’s what I’ve been basically living on for the past few weeks! Thank you for giving me more fuel for my fire, so to speak.
