When it comes to cookies, I’ve got plenty of favorites. A classic chocolate chip cookie is always a win. Throw some bacon into those chocolate chip cookies and? I’m powerless. I have no self-control around Chocolate Chip Bacon Cookies with Maple Glaze. Those cookies are like eating a Mo’s Bacon Bar in cookie form. Please, tell me you’ve had a Mo’s Bacon Bar! They’re incredible. Salty, sweet, smokey. Sorry, I get distracted by all things bacon.

I also love slice-and-bake cookies like Cinnamon Pecan Toffee Cookies. Easy to make yet feel like something truly special. But the top dog, favorite of the favorites has to be the good ol’ Snickerdoodle. Those cookies are just amazing in their simplicity. Simple sugar cookies rolled in cinnamon sugar. They need no improvement however, I love translating those flavors into other creations.

I made Snickerdoodle Pie which really reminded me more of eating a cinnamon bun or a super cinnamon-y coffee cake. In fact, that pie was so unique in that it was very un-pie-like in the best possible sense of the word. It was like a light fluffy cake inside a pie topped off with a burst of cinnamon and turbinado sugar. Crazy good! And if you want to really get the most cinnamon flavor try using Saigon cinnamon. It’s a much more intense cinnamon flavor. Since making that little discovery, it’s all I use. Amazing flavor!

I love me some snickerdoodles and I love the idea of having them in muffin form. I’m going to have to look for the Saigon cinnamon though…it sounds outstanding.

I just made a snickerdoodle cake and it was a huge hit and I can almost taste these. The frosting is just a bonus…a wonderful, sweet bonus!

I adore cinnamon, especially when it is in something baking in the oven. That wonderful aroma means all’s right in the world. Your cupcakes sound like a perfect trat.

OMGoodness why have I never put bacon in my chocolate chip cookies?!? I am a sucker for cookies, especially chocolate chip. Snickerdoodle is always a cookie that I say I’m on the fence about but get me around them and I want to eat them like chips! One after another after another. Now I want a snickerdoodle cupcake.
