What happens when an ice cream lover (me!) and bread baker (also me!) starts brainstorming about mashing that love of two things together in bread form? Well you get Rocky Road Bread! I adore quick breads most of all because well, they’re quick to make! No waiting for yeast to do its thing. Chocolate and nuts in bread make such a nice, slightly sweet treat. In the fall I loved pairing chocolate, nuts and fruit for Chocolate Walnut Cranberry Pear Tea Bread.

This quick bread is filled with melty marshmallows, chocolate and crisp toasted almonds for a loaf of bread with all the fixins of rocky road ice cream. Yum! Love those almonds on top! I love making quick breads. Yeast breads an I are not friends.

Thanks Jennifer! Yeast and I used to be mortal enemies but now we get along just fine 😉 but I still love a good quick bread and this one is delightful.
