“Love is in the air … everywhere I look around. Love is in the air … in every sight and every sound.” Valentine’s Day is less than two weeks away! Now, I could take it or leave it honestly. Mike and I don’t celebrate. Sometimes we exchange a card but that’s it. We make sure to show each other our love throughout the year so we don’t have to save it all up for one day. I often find a note written in crayon on the bathroom mirror or a tiny paper stuck inside one of my magazines reminding me that I’m loved. I try to do the same things for him as well.

But this year I’m kind of excited for Valentine’s Day because it’s Maddy’s first year in school, ok it’s only preschool but she has classmates and will be handing out valentines for the very first time. It’s a small thing but I’m exceptionally psyched for it. I’ll be baking up some adorable cupcakes for her class party which I know the kids will love. Perhaps I’ll even whip up a batch of these red velvet chocolate chip cake batter cookies!

Remember those funfetti cake batter cookies I made for Food Fanatic last month? Well, I decided to make a red velvet version because they are just too easy not to! These would be perfect for a class party or for surprising your loved ones after a weeknight dinner. The cocoa flavor of red velvet with mini chocolate chips scattered throughout will have them swooning.

These cookies were my creation for Secret Recipe Club this month! I took a peek atΒ It’s Good To Be The Cook this month. Beth is 27 years old and lives outside Philadelphia (So close to me! We should get together!) She of course, loves to cook, eat out and travel. She’s a total dog person (me too!) and a Philly sports fan. Her site is filled with drool worthy deliciousness!

This Italian hoagie dip definitely needs to be made in my kitchen as soon as humanly possible! But of course my sweet tooth is always in high gear so naturally I turned to sugar. These apple toffee blondies with brown sugar frosting were calling my name but ultimately, once I landed on her red velvet gooey butter cookies I knew I’d found my recipe for the month. You’re gonna love these! Soft, chocolatey and sure to make everyone swoon.

Red Velvet Chocolate Chip Cake Batter Cookies

2 hours, 30 minutes

Yield: 2 dozen

Red Velvet Chocolate Chip Cake Batter Cookies

Soft, buttery cake batter red velvet cookies with chocolate chips scattered throughout. Easy to make and sure to please!

Ingredients

  • 8 ounces cream cheese, room temperature
  • 1/2 cup butter, at room temperature
  • 1 egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 (18-ounce) box red velvet cake mix
  • 1 cup mini chocolate chips

Instructions

  1. In a large bowl, beat together cream cheese and butter until smooth and fluffy. Add the egg and vanilla and beat again to incorporate. Add the cake mix and beat until combined. Fold in chocolate chips.
  2. Refrigerate dough 2 hours.
  3. Preheat oven to 350 degrees. Line two baking sheets with parchment paper. Set aside.
  4. Roll 1 tablespoon dough into a ball between gloved hands and place 2 inches apart on prepared baking sheets. Bake in preheated oven 12 minutes. Remove from oven. Cool on baking sheet 5 minutes before very carefully transferring to wire rack to cool completely. Cookies will be VERY soft!
