It’s my birthday today!! The big 3-8! Okay, maybe not so momentous but … I’m one of those people who doesn’t mind getting older and looooooves when her birthday swings around. I love my birthday, embracing each and every year. I look forward to it so much which is kind of silly considering there’s no great celebration, no party, no hoopla yet, I still love it. I also happen to be born the day before Halloween and that’s one of my very favorite holidays closely followed by Independence Day.

One thing this birthday girl adores is s’mores. I’m totally down with the classic combo of chocolate, marshmallows and graham crackers thanks to my dear old dad. He used to take my brother, Matt and I camping all the time. No camping trip was complete without s’mores. For that matter, no back yard barbecue is complete without s’mores! Every time we get together in the summer we make sure that once the sun goes down, a fire is stoked in preparation for ooey, gooey s’mores.

In my book, I consider s’mores a year round food. Especially if the season is autumn. Not only is it my birthday and Halloween, autumn is my favorite season and it’s perfect fire weather. An outside fire is perfect for … yep, you guessed it … s’mores!! Recently I decided to get ultra autumn with my s’mores by adding a touch of pumpkin to the classic mix of chocolate, marshmallow, graham. Trust me, you won’t be disappointed.

A small can of pumpkin mixed with pumpkin pie spice and brown sugar goes wonderfully with a smear of Nutella or a classic Hersey square. Sandwich it all between a toasty marshmallow and a crunchy graham cracker and you’re good to go. Make this happen the next time you stoke up the fire pit. You’re sure to love every bite!

Pumpkin S’mores

Yield: 8 servings

Pumpkin S’mores

Toasted marshmallows sandwiched with sweetened pumpkin puree and decadent chocolate between two crunchy graham crackers for an autumn spin on classic s'mores.


  • 8 ounces canned pumpkin
  • 1/2 tablespoon pumpkin pie spice
  • 3 tablespoons brown sugar
  • 8 graham cracker sheets, broken in half
  • 1/2 cup chocolate hazelnut spread or 8 chocolate squares
  • 8 marshmallows


  1. In a medium bowl, stir together pumpkin, pumpkin pie spice and brown sugar until well combined.
  2. On 8 graham crackers place a tablespoon of chocolate hazelnut spread or a square of chocolate and a dollop of the pumpkin mixture. Set aside.
  3. Skewer one marshmallow and toast over an open fire then transfer to a graham cracker square. Sandwich the marshmallow graham cracker with the chocolate pumpkin graham cracker. Repeat with remaining squares to form 8 s'mores.
