Favorite snack EVER!! You guys, this is healthy pizza at its finest and I am head over heels for this simple Portobello Mushroom Pizza recipe. I have a very structured eating “routine.” I tend to eat small meal every 2 1/2 to 3 hours. That’s breakfast, morning snack, lunch, afternoon snack then dinner. If I’ve been really good, sometimes there’s even dessert! When it comes to my snacks, I try to keep them in the 150 calorie range.

Portobello Mushroom Pizza

Prep Time: 5 minutes

Cook Time: 15 minutes

Yield: 1 serving

Portobello Mushroom Pizza

Hearty, meaty portobello mushrooms topped with marinara, melted mozzarella and veggies for a healthy snack or meal!


  • 1 portobello mushroom cap, stem removed
  • 1/2 teaspoon olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon Italian seasoning
  • 1/8 cup marinara sauce
  • 3 tablespoons mozzarella cheese
  • 1/8 cup chopped zucchini
  • 1 tablespoon chopped red onions
  • 2 sun dried tomatoes, chopped


  1. Preheat oven to 400 degrees. Line a baking sheet with foil.
  2. Place mushroom on prepared sheet. Drizzle mushroom with olive oil. Sprinkle with garlic powder and Italian seasoning. Top with marinara sauce, mozzarella then vegetables.
  3. Bake in preheated oven for 15-20 minutes, until tender.
