In our house, rice is something we enjoy frequently. It’s often seen along side our dinners. We enjoy rice on its own but sometimes it just needs to really be one of the stars of the show instead of sitting on the sidelines. When I was approached by Della Rice to take part in their Create A Stir campaign, I couldn’t have been more thrilled. Della rice is encouraging everyone to get a little creative with rice.

So what is a Stir exactly? A Stir is dinner done quick. A Stir is something that inspires you to get creative in the kitchen without it consuming your whole evening. Della Rice is the perfect blank canvas for topping with all sorts of deliciousness. Your Stir can include any ingredients you have on hand or enjoy eating. Choose a protein, some vegetables and a sauce. Set all your yummy ingredients atop a delicious bowl of Della rice and dinner is served! It doesn’t get much easier than that and the beautiful thing is that the culinary creations are limitless.

I used Della’s Jasmine with Roasted Garlic rice for my stir. I love that this unique blend adds the perfect garlicky touch of flavor to my Stir. Next, I topped that fragrant rice with grilled chicken slices, roasted brussels sprouts and a sprinkling of those winter jewels, pomegranate arils. The perfect finishing touch was a spicy pomegranate chili sauce drizzled over the top. This stir is a sweet, savory and spicy all at the same time. It’s a flavor explosion!

Spicy Pomegrante Chicken Rice Bowl

Spicy Pomegrante Chicken Rice Bowl

Fragrant jasmine roasted garlic rice topped with juicy chicken, roasted brussels sprouts, sweet pomegranate arils and a spicy pomegranate chili sauce.


  • 2 cups brussels sprouts, halved
  • 2 tablespoons olive oil, divided
  • 1 1/2 teaspoons sea salt, divided
  • 1 teaspoon fresh ground black pepper, divided
  • 2 cups Della Jasmine with Roasted Garlic rice, prepared according to package directions
  • 8 ounces boneless chicken breasts
  • 1 ounce pecans
  • For Sauce:
  • 1/2 cup pomegranate arils
  • 2/3 cup pomegranate juice
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons brown sugar
  • 1/2 tablespoon chili garlic sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon lime juice


  1. Preheat oven to 400 degrees. In a large bowl, toss together brussels sports with 1 tablespoon olive oil, 1 teaspoon sea salt and 1/2 teaspoon black pepper. Spread on a rimmed baking sheet and bake in preheated oven for 15-20 minutes until tender and lightly caramelized.
  2. Prepare Chicken:
  3. While brussels sprout roast, place remaining tablespoon of olive oil in a large skillet and place over medium-high heat. Sprinkle chicken breasts with remaining salt and pepper. Sauté chicken until browned and cooked through, about 6 minutes per side. Remove from pan, cover loosely with foil and rest while brussels sprouts finish roasting and sauce reduces then slice.
  4. Prepare Sauce:
  5. While brussels sprouts roast and chicken is cooking, prepare sauce. Whisk all sauce ingredients together in a small sauce pan. Bring to a boil over medium-high heat. Reduce temperature to a achieve a simmer and continue simmering sauce until reduced by half and thickened, about 15 minutes.
  6. Assemble:
  7. Place one cup Della Jasmine with Roasted Garlic rice in a bowl. Layer 4 ounces of sliced chicken on top of the rice. Next top with one cup roasted brussels sprouts. Sprinkle with 1/4 cup pomegranate arils, 1/2 ounce of pecans and a drizzle with spicy pomegranate chili sauce. Repeat with remaining ingredients to create a second bowl.

Thanks so much Deanna! I’m right there with you, I used to loathe brussels sprouts. Then I roasted them and ended up really coming to enjoy them.
