Guess what? I have a new computer!!! Yes, it’s true. After more than a month I’m back in action. I have a little tidbit to share with you. Being unplugged for that long was actually refreshing! That’s not to say that I haven’t missed sharing with you, baking for you and chatting here but man oh man, I forgot what it was like not to be attached daily to my blog, Facebook and all that goes with this biz. I forgot what life was like before blogging and it was an eye-opening experience.

I realized that I needed that mental break and that going forward I need to allow myself time for me, time for my family, more time to do the things that bring me joy other than blogging. In my “time off” I spent more time doing things outdoors, swimming, taking day trips with the girls or even just walking to the park. It was nice not to say, “No, we can’t do that this morning. Mommy needs to bake.” It was nice to be free! It was nice to choose to bake something with my girls instead of creating out of an obligation to a deadline, true or self-imposed.

I never want to let you guys down. If I don’t post X number of days per week, I’ve always felt like that was what I was doing. I still don’t want to let you guys down but I also need to make sure I’m taking care of me too. So maybe I won’t post 3 or 4 times a week. Maybe I’ll continue posting once or twice a week like when I was trying to operate Food Babbles from my phone while other weeks I may be around a bunch. Feast or famine, I hope that’s alright with you.

To make it up to you, I baked you some whoopie pies. Not just any whoopie pies though, these have summer fun written all over them. These are pink lemonade whoopie pies! They’re easy to make, sweet and tart in each bite and they’re handheld cake! What’s not to love about handheld, frosting filled cakey goodness?

Pink Lemonade Whoopie Pies

45 minutes

Yield: 12 servings

Pink Lemonade Whoopie Pies

These pink lemonade whoopie pies are a handheld summer treat! Soft and cakey with pink lemonade filling.


    For Whoopies:
  • 1 (15.25 oz) box white cake mix
  • 2 eggs, room temperature
  • 1/2 cup butter, melted and cooled to room temperature
  • pink food coloring, optional
  • For Filling:
  • 1/3 cup finely chopped strawberries
  • 1 tablespoon granulated sugar
  • 1/2 cup butter, softened
  • 2-3 cups confectioners' sugar
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh lemon zest


    Make Whoopies:
  1. Preheat oven to 350 degrees. Line two baking sheets with parchment paper. Set aside.
  2. In a large bowl, mix together cake mix, eggs, butter and food coloring (if using) until incorporated. Measure 1 tablespoon scoop of dough and form into a ball between your hands. Place on prepared baking sheet 1 1/2 inches apart. Repeat with remaining batter.
  3. Bake in preheated oven for 10-12 minutes. Watch closely and remove once just starting to turn golden, do not brown. Cool on baking sheets for 5 minutes then gently transfer to wire rack to cool completely.
  4. Make Filling:
  5. In a small bowl, stir together strawberries and granulated sugar. Set aside.
  6. In the bowl of a stand mixer fitted with a paddle or in a bowl with a hand mixer, beat butter until pale and fluffy. Slowly add 2 cups confectioners' sugar and beat until incorporated.
  7. Mash strawberries with a fork. Place a fine mesh sieve over mixing bowl with butter/confectioners' sugar mixture. Press strawberries through sieve into mixing bowl. Discard seeds. Add lemon juice and lemon zest to mixing bowl. Beat all ingredients until incorporated. Add more of the remaining confectioners' sugar and continue beat until until desired piping consistency has been reached.
  8. Assemble:
  9. Fill a pastry bag fitted with an open tip with prepared filling. Pipe onto 12 cookies. Top with remaining 12 cookies. You may have filling leftover.

These are so pretty! I love that the cake is vanilla and just the filling is lemon flavored, great balance!

Listen, you gotta do what’s right for you. Time away from the computer makes us all a little less crazy, I think – and it frees us up to cook what we want, SOMETIMES EVEN FOR FUN! (Says the girl who’s completely crazed right now, as usual. 🙂 ) No matter how many or how few times you post per week, we’ll still love you.

I went all day today without internet so I got a small taste of what you mean, I still had my iphone though, I did get a lot done today as opposed to sitting in front of my computer. Love your pretty pink whoopies. Sound delicious and are so pretty! Glad you are back.
