As you may recall, back in July I began running and set a goal for myself. I wanted to run a 5K. In September I accomplished that goal! But shortly after I began running I knew I had bigger goals for myself. I started participating in CrossFit and I’ve been loving it. It kicks my butt each and every time I do it yet I love it. So back to that bigger goal. So… It’s official! I have registered for Tough Mudder in June. Yes, I know it’s quite a way off still but I’m psyched! I’m also incredibly psyched that I still have 6 more months to train because it is going to be the hardest thing I’ve ever done. I cannot wait to see what I can accomplish, to push myself beyond my limits.

So that’s the big news for me these days. Tonight, I’m off to my second cookie party and I’m excited. I had planned on making more of these Cinnamon Swirl Cookies but at the last-minute I decided I had to make those Salted Caramel Butter Bars I was telling you about. They were AMAZING! So I made 10 dozen of those yesterday. I’m kind of all baked out now. I don’t think that’s ever happened to me before but I suppose if you make 10 dozen of anything you’ll be over it about halfway through. So I’m stepping out of the kitchen this weekend. It’s going to be all about some relaxation and gorging myself on cookies. As always, here’s what was going on around Food Babbles. Hope you all had a wonderful week and have a fantastic weekend!

Konafa (Middle Eastern Cheesecake) from Blue Kale Road:  This cheesecake is so unique and I really want to make it. This cheesecake is topped with shredded phyllo dough. When it emerges from the oven it’s served warm, sprinkled with nuts and is topped with a sugary syrup. It sounds so amazing to me!

Lemon Pie Tartlettes from Magnolia Days: I love everything lemon. These little lemon tartlettes are adorable. They sound so bright and refreshing.

Peppermint Parfaits from Jelly Toast:  First, I have to tell ya… This is my new favorite site!! You need to read this blog. The pictures are breathtaking and the recipes mouth-watering. Love! This recipe is both of those things. These little peppermint parfaits can also be made boozy! She added marshmallow vodka to the mix and I love her for that. Peppermint, gelatin, whipped cream… I’m in heaven.

What a goal! A friend tried to drag me into a Tough Mudder event but I am so far out of shape that I think I’d be anxious and worried for the weeks leading up to it. Your enthusiasm is inspiring and I wish you all the best!

Thank you Holly! I’m sure I’ll be a nervous wreck once it gets closer. I’ve been working hard so far and I still have 6 months but I’m sure that it will be here in a blink of an eye. For now, I’m only mildly nervous 😉
