It’s official, I am a green smoothie convert! Over the last month you’ve heard me talking about my 30-Day Green Smoothie Challenge and you’ve followed me on that journey. I appreciate all your support and comments on the various combinations I’ve been slurping for the last 5 weeks now. Yep! That’s right, 30 days and beyond! I’m hooked. The challenge is done but I’m still going strong. I’m consistently drinking two a day now and I really look forward to them.

That may sound a little kooky but it’s true. If for some reason I can’t have two in a day, I feel sluggish and like I’ve overdone it by eating differently. Green smoothies have given me more energy and just generally made me feel like I’m doing something so very healthy for myself. So isn’t it high time I gave you a recipe for one? Maybe you’ll love them just as much as I do.Β This smoothie is refreshing, full of antioxidants, fiber, iron and vitamin C. But the best part is that it tastes amazing!

This month for Secret Recipe Club, I was matched up with Jessie of Vanderbilt Wife and I loved looking around her site. At first I thought about making these Blueberry Lemon Ricotta Muffins. Since I stepped away from Muffin Monday, I realize how much I miss making muffins! Then I set my sites on this Butterfinger Cake. I have yet to make a poke cake and I’m dying to! Although, due to Maddy’s peanut allergy I would have had to heavily adapt that cake to meet her needs. Then I found her Vegan Blackberry Coconut Smoothie and I knew I had found my recipe. I also knew immediately that I would be changing the color though. Hers is such a gorgeous purple while mine is well, a somewhat strange shade of green with hints of purple.

But this purple-green smoothie is delightful! I added a mixture of berries instead of just using blackberries and also some cherries because I love them so. As I was getting ready to make my smoothie I realized I didn’t have the coconut milk that I thought I did so I improvised with the coconut almond milk I had on hand. Of course, I added spinach! I whirred all that healthy goodness together and it was a little glass of heaven.

Mixed Berry Coconut Green Smoothie

5 minutes

Yield: 2 servings

Mixed Berry Coconut Green Smoothie

A delicious healthy green smoothie packed with antioxidants, fiber and vitamin C.

Ingredients

  • 2 cups spinach, fresh
  • 2 cups coconut almond milk (I used Blue Diamond Almond Breeze)
  • 1 cup cherries, pitted
  • 1/2 cup frozen blackberries
  • 1/2 cup frozen raspberries
  • 1 frozen banana

Instructions

  1. Blend together spinach and coconut almond milk until smooth. Add cherries, blackberries, raspberries and banana. Blend again until smooth.

Yum! If I made this just for me, I would definitely add spinach. Love getting my healthy kick. I don’t think my kiddos would drink a green smoothie, though.

It’s so funny because I thought the same thing about my girls. My 3 year old has taken some time to warm up to the idea but now she’ll drink them occasionally. My 18 month old sucks them back like it’s nobody’s business! I have to make a big batch now since everyone wants some πŸ™‚

Confession: I’ve been terrified to have a green smoothie even though I know it would be better for me than my morning ice coffee. Reading this, I think it’s time I come to terms with it, drop by Whole Paychex and pick up some ingredients and break in the vitamix.

Ha! Well I loooove my iced coffee and I still drink them πŸ™‚ I just have a green smoothie as my breakfast and have coffee after. I’ve been drinking them for about 5 weeks now and I absolutely love them. Didn’t think I would but I truly do. And there’s so many recipes out there that are so good. Kate, I am totally on a smoothie kick too. Today I had cereal for breakfast, and I have felt off all day. On the other hand a smoothie can keep me going until lunch. I love this combo. I would have never thought of adding cherries to a smoothie, but I think it is brilliant because I love their flavor, and they are so good for you.

Thanks so much Katie! I’m so happy you like this. I truly have been enjoying my green smoothies. When we were at KAF, I felt so “off” not having them for 3 days. I was actually craving them. It’s become a happy, healthy habit for me. I always have one for breakfast and usually another for lunch too. Love them! And the best part is, my kids love them too so I feel like I’m doing something really great for all of us.

Ooo!! I’m so happy to hear you made and like this! And glad the “baby” did too πŸ˜‰ I’ll probably still call Molly the baby when she’s 4. It’s funny because Maddy (my 3 year old) has taken a long time to come around to the green smoothies but now she drinks them but the baby (my 18 month old) drinks them like they’re going out of style. Now it’s our morning routine that we all drink our green smoothies at breakfast.
