Maple Bacon Waffle Bread Pudding -

Decadent bread pudding made with waffles, scattered with bacon, pecans and cinnamon with a touch of maple syrup. Is this breakfast or dessert? You decide! I really think it’s the best of both worlds. There are waffles and bacon so I’m calling this breakfast but if your sweet tooth is raging later in the evening, leftover Maple Bacon Waffle Bread Pudding could be the perfect fix. If there are leftovers, that is. There weren’t at our house!

This bread pudding is just like making overnight french toast but with waffles! Egg soaked waffles mixed with bacon bake to perfection in a toasty oven and are sprinkled with a cinnamon pecan streusel topping for a special brunch or a lazy weekend breakfast treat. Hungry yet? Yowza – this looks great! I’m not a big fan of bread puddings usually, but I think one made with waffles sounds right up my alley! I’m posting a pear/cranberry crisp recipe on my blog tomorrow that looks a lot like this (at least on top) and is also dessert-or-breakfast friendly. ‘Tis the season for such decadence, am I right?
