These bright lemon muffins are light, fluffy, tender and the perfect thing to brighten those winter blues. A sprinkling of coarse turbinado sugar over these golden muffin tops add a sweet little satisfying crunch. Just taking a nibble of one of these happy citrus muffins will make you feel like spring has sprung! And I don’t know about you, but I’m oh so ready for spring.

Although, I’m sure a few months from now I’ll be complaining about the oppressive heat but for now a little warmth would be much appreciated. Since Mother Nature can’t make up her mind whether our days will be 60 degrees or 20 degrees in this crazy March, at least I’ll have these muffins to get me through. For some reason, citrus always reminds me of warmer days. I love making lemon desserts in these last few winter weeks as a precursor to the warmer days ahead. One can only hope, right?

The muffins are beautiful, I love using ricotta, makes the muffins very fluffy and light. Can’t ever get enough lemon!

I think the recipe should have baking soda instead of baking powder? I made a lovely batch of lemon scented hockey pucks following the recipe as written.

I’m so sorry you had trouble with this recipe. The recipe is written correctly with the baking powder. Perhaps your baking powder wasn’t fresh? I know I’ve baked up my fair share of hockey pucks over time if my baking powder or baking soda had been hanging around for a bit. I do hope you’ll give this recipe another try. It’s a favorite in our house!
