S’mores are a summertime staple. Growing up I can vividly remember camping with my father and brother. We would spend our evenings fireside, long sticks in hand with a puffy marshmallow on the ends. We twirled them over the open flame until they were toasted golden brown then quickly easing those soft, warm marshmallows off their sticks in between two graham crackers. Perched on top of a square of chocolate that would soon melt with the heat of the marshmallow, the sandwich was complete.  To this day, s’mores are one of my favorite summer treats to share with my girls.

This month for Improv Challenge, our ingredients were lemon and lime. I’m such a big fan of citrus fruits, lemons especially. Lemon meringue pie is one of my top three all-time favorite pies. The tartness of lemon with the smooth sweetness of the toasted meringue atop are a perfect complement. These lemon lime meringue s’mores mimic that flavor profile so nicely. Like lemon meringue pie or key lime pie in s’mores form! Lemon and lime curd with a warm, toasted marshmallow sandwiched between two graham crackers. It’s such a sweet summer treat.

I used jarred curds but if you’re feeling adventurous, citrus curds are very easy to make! I’ve made yuja curd here in the past so if you’d like to make your curds from scratch simply replace the yuja juice and zest with lemon or lime juice and zest.  This recipe is a unique spin on classic s’mores and the perfect dessert for a summer barbecue!

Lemon Lime Meringue S’mores

Yield: 6 servings

Lemon Lime Meringue S’mores

Like lemon meringue pie or key lime pie in s'mores form! Lemon and lime curd with a warm, toasted marshmallow sandwiched between two graham crackers. It's such a sweet summer treat.

Ingredients

  • 12 graham cracker squares
  • 1/3 cup lemon curd
  • 1/3 cup lime curd
  • 6 large marshmallows

Instructions

  1. Dollop about 1 tablespoon of lemon curd and 1 tablespoon of lime curd on 6 graham cracker squares.
  2. Toast marshmallows on a skewer over an open flame until golden brown and toasted. Slide the marshmallow off the stick and onto the remaining graham crackers.
  3. Sandwich the curd covered graham crackers and the marshmallow topped crackers together. Enjoy immediately.

Genius! Easy to pack ingredients (unlike melty, melty chocolate…)
Although we are not a fan of traditional meringue, THIS will have to be tried!
