Healthy Pumpkin Pie Muffins -

With the departure of October and November, it seems that the humble pumpkin gets put on the back burner until autumn appears again the next year. Pumpkin season actually extends months longer. Pumpkin pie is a holiday dessert right up until the end of the year yet I seem to see less recipes after November has come and gone. So here it is December and I’m hitting you with one last pumpkin recipe because I’m not ready to see it go just yet.

After all the gluttony of Thanksgiving I figure we can eat a little healthier before round two with the arrival of Christmas. These healthy pumpkin muffins are a great starting place. With less sugar, whole wheat flour and half the oil thanks to the addition of applesauce, these muffins are a powerhouse of flavor and pack a nutritional punch as well. They’re moist, flavorful and filled pumpkin pie filling.

Healthy Pumpkin Pie Muffins -

I didn’t call these spiced muffins “pumpkin pie muffins” for nothin’! These muffins are doubled up with pumpkin inside and out, scented with cinnamon and all the warm spices that make pumpkin pie so wonderful. One bite of these muffins and you’ll forget you’re eating something good for you and feel like you’re treating yourself.

I agree! I don’t know why pumpkin makes it to the back burner as soon as November is done! Still a great holiday fruit. I am about to post a pumpkin post too!

These look delicious! Looks like the perfect way to use up the extra pumpkin purée I’ve got in the cabinet. Long live pumpkin season!
