“It’s the most wonderful time of the yeeeeeeeear!” **She sings in her best on-key voice.** No, it isn’t Christmas. The most wonderful time of the year is April. April 12 to be exact. Thinking I’m crazy yet? Wondering what the heck I’m talking about? Let me explain. For the entire year, there are these random food holidays. I don’t know who determines that it’s National Cheese Doodle Day or National Cold Cuts Day (strange but true.) There are a few zingers out there that make you go “what??” BUT one food holiday I totally get behind is April 12th, National Grilled Cheese Day!

I loooooooooove grilled cheese! Not only that, I really adore getting creative with what I can sandwich between two slices of bread to create the ultimate grilled cheese. Balsamic strawberry jam with creamy Brie? Oh yaaa! I could eat that for breakfast. How about  Kerrygold Dubliner paired with peppery arugula and peach jam? That’s a home run for sure! I make that one all the time.

As a big fan of Kerrygold butter and cheeses, I grabbed some Dubliner with Irish Stout. Have you tried this cheese? AH-mazing! Honestly, I didn’t think the sweet, nutty flavor of Dubliner could get any better but adding malty stout definitely took it up a notch and became the star of this amazing grilled cheese recipe.

I adore sage and frying it in golden, melted butter is just another way to enjoy it. As you cook the butter browns. I can eat fried sage leaves straight from the pan. The nutty browned butter with the earthy sage adds so much flavor to this beautiful grilled cheese sandwich. Crusty, golden sourdough bread sandwiches uniquely wonderful Kerrygold with Irish Stout Cheese with fragrant fried sage and tart apples creating the ultimate grilled cheese sandwich. Now you can celebrate National Grilled Cheese in style.

Grilled Cheese with Fried Sage & Apples

Yield: 1 sandwich

Grilled Cheese with Fried Sage & Apples

Crusty sourdough bread sandwiches melted Kerrygold Dubliner with Irish Stout Cheese, tart apples and fried sage for the best grilled cheese recipe.


  • 2 tablespoons Kerrygold butter
  • 6 fresh sage leaves
  • 2 thick slices sourdough bread
  • 3-4 slices Kerrygold Dubliner with Irish Stout Cheese
  • 2 slices of Granny Smith apple


  1. In a small skillet, slowly and gently melt butter. Once the butter begins to bubble, add sage leaves. Fry on each side until crisp. Remove from pan and set aside.
  2. On one slice of sourdough bread, arrange cheese slices then top with sage and apples. Place second slice of bread on top. Place in same skillet over medium heat. Cook until golden and cheese begins to melt. Flip and continue cooking until second side is golden and cheese has melted.
  3. Remove from pan and enjoy immediately.
