As we enter our second month of the new year, so many times we find ourselves struggling to keep those healthy eating resolutions or we have given up on them entirely. For me, that tends to be because at times the healthy stuff just isn’t as satisfying as the less healthy choices. But really, it shouldn’t be that way! Healthy, natural foods are just as satisfying and fulfilling like these southwest chicken crunch bites.

These little three bite morsels really pack a flavor punch filled with southwest seasoned chicken, black beans, cilantro and just a little sprinkle of cheese. Add a little dollop of guacamole and salsa and you’re good to go! How awesome would these be for passing around at The Big Game this weekend? I’m definitely serving them up and I know the crowd will go crazy for them.

Oh and there’s one other thing, the crunch. What about the crunch? Gluten-Free Southwest Chicken Crunch Bites

Yield: 16 servings

Gluten-Free Southwest Chicken Crunch Bites

Gluten-free tortillas filled with southwest seasoned chicken, beans, cheese and more! Makes a wonderful lunch, quick dinner or appetizer to feed a crowd.


  • 2 boneless, skinless chicken breasts
  • 1 tablespoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 16 small gluten-free tortillas
  • 1 (15 oz) can black beans, drained and rinsed
  • 1/4 cup finely chopped fresh cilantro leaves
  • 1/2 cup 4-cheese Mexican cheese blend
  • 16 Van's Gluten-Free Multigrain Chips in Nacho, Nacho, Man flavor
  • Guacamole & Salsa, optional


  1. Season both sides of chicken breasts with chili powder, garlic powder, cumin and salt. Cook in a medium skillet over medium high heat until browned and no longer pink inside. Once cool enough to handle, shred the chicken using your hands or two forks.
  2. Place a tortilla on a work surface. Add a small spoonful (about a teaspoon) of black beans in center of tortilla. Top with a small amount of shredded chicken. Sprinkle with a little cilantro and a little cheese. Take one Van's Gluten-Free Multigrain Chip and crumble it over the top.
  3. Fold one edge of the tortilla to the center and repeat all the way around until there are no more edges and filling has been contained inside.
  4. Spray a medium skillet lightly with nonstick cooking spray and place over medium heat. Place folded tortilla, fold side down into the heated skillet for 2-3 minutes, pressing gently on the top with a spatula until golden and sealed. Gently flip the tortilla and repeat on the other side. Remove filled tortilla from skillet and move to plate. Repeat with remaining tortillas. Serve warm with guacamole and salsa, if desired.
