
Ahh, the protein waffle. Have you ever tried to make them? I have tried my hand a several recipes and had other people send me recipes attesting to their deliciousness. In my experience, most recipes fall flat. Not literally flat but definitely in the taste and texture department.
I’ve found most protein waffle recipes are far from being “waffle-like.” I’ve found many to be like chewy air with very little flavor. Overall, I’ve been highly disappointed. So I decided to play around a bit to see if I could pursue a protein waffle that was more like the real thing.
What I found was the addition of one simple ingredient made all the difference in the world. Many protein waffle recipes simply consist of protein powder, an egg, some water and baking powder. Simple, easy but despite anything I would incorporate like spices, I couldn’t get that recipe to taste like anything as satisfying as a good, ol’ fashion, warm, golden, fluffy waffle.
Until now.
Coconut flour! Coconut flour was the answer to all my fluffy protein waffle prayers. I wanted my waffles to still be gluten free and this simple addition of a mere 2 tablespoons of coconut flour not only added flavor to my waffles but also completely changed the texture to something much more akin to the waffles of many lazy Sunday mornings past.
Coconut flour was a game changer here but I also amped up the flavor profile with a touch of vanilla and I used unsweetened almond milk in place of water. No more boring, chewy protein waffles for this girl! Once I’d cooked them up to a golden brown, I topped mine with fresh blueberries and a drizzle of agave and let me tell you, I was one happy eater for sure. No doubt you will be too!

Gluten Free Fluffy Protein Waffles
Fluffy, golden brown gluten free protein waffles.
Ingredients
- 4 scoops vanilla protein powder
- 4 tablespoons coconut flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup unsweetened vanilla almond milk
- 4 eggs
- 2 tablespoons agave
- 2 teaspoons vanilla extract
Instructions
- Preheat your waffle iron.
- In a large bowl, whisk together the protein powder, coconut flour, baking powder and salt.
- In a medium bowl, whisk together almond milk, eggs, agave and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix just until combined.
- Using a 1/4 cup measure, pour batter onto preheated waffle iron and cook until golden brown and cooked through.
- Serve immediately.
