Gluten Free Almond Oat Protein Bites -

I don’t know about you, but I have one heck of a sweet tooth. It’s been the undoing of many healthy eating endeavors. Doing well … doing well … doing well … BAM! Ice Cream!!! Cue the complete and total loss of self control when faced with the presence of sweet deliciousness.

But does it really always have to be that way? No, probably not. I could just act like an adult and resist the urge. But hey, life is short! I’m more of an 80/20 person anyway. I eat well 80% of the time and 20% of the time I’m all over the good desserts.

Sometimes though, I do really well and I preplan for the inevitable emergence of my sweet tooth. These Gluten Free Almond Oat Protein Bites are an glowing example of healthy adulting at its finest. I can eat one of these and it’s just the perfect about of sweetness to knock most of my cravings out without totally derailing my desire to be healthy, fit and strong.

Gluten Free Almond Oat Protein Bites -

I mixed together gluten free oats, unsweetened shredded coconut, almond meal, chocolate protein powder and cacao nibs. Next almond butter and honey get mixed in to hold it all together. Roll each into a ball and viola! Your sweet tooth will be utterly and completely satisfied without even realizing that while this sweet treat is still in fact, a treat, it’s a treat that is a much better choice that the hot fudge sundae covered in sprinkles and whipped cream.

These are no bake, quick and easy. Just whip them up then pop them in the freezer for grab-and-go snacking ease later on!

Gluten Free Almond Oat Protein Bites

Yield: 18-20 servings

Gluten Free Almond Oat Protein Bites

Little almond bites packed with coconut, cacao and protein for a sweet treat that's a better choice.


  • 1 cup rolled oats
  • 3/4 cup almond butter
  • 1/3 cup almond meal
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup cacao nibs (or 70% dark chocolate, cut up)
  • 1/4 cup agave, pure maple syrup or honey
  • 1 tablespoon vanilla
  • 3 scoops chocolate protein


  1. Line a baking sheet with parchment paper.
  2. In a small bowl, warm almond butter in 30 second increments until smooth and stirs easily.
  3. In a large bowl, mix together all ingredients with a rubber spatula. It will be difficult at first. Once it’s no longer sticky, work it together with your hands until well combined. If mixture is too dry, add a little more agave.
  4. Form into 1 tablespoon balls and place on a parchment lined sheet. Freeze.
  5. Once frozen, store in an airtight container. When ready to eat, pull one out and let it sit at room temp for 10-15 minutes to soften a bit and enjoy!
