Sometimes I make something and I’m just making it for dinner or dessert or for a party. It’s not a conscious project for Food Babbles yet once I’m done I realize it’s too tasty not to share with you all. This Garlicky Sautéed Vegetable Medley is one of those dishes. This medley was just a humble side dish to go with a leftover chicken breast I was having for lunch one random week day.

I didn’t think it was anything special, certainly not blog-worthy. That is, until I tasted it. You guys, this side dish recipe is so simple but the flavor is just outstanding. Here I sautéed fresh asparagus, yellow squash and mushrooms with a hefty dose of garlic and red onions. A little salt and pepper are the finishing touches. See? Simple!

But I’ve wanted to make this over and over since the first time. These sautéed vegetables are just so flavorful. Simple yet unforgettable. Not a fan of mushrooms? Not a fan of the asparagus or yellow squash? That’s the beauty of this recipe. You could sauté whatever vegetables appeal to you and have the same delicious results. How about broccoli and cauliflower? Green beans? Zucchini?

No matter whether you keep the recipe as is or you substitute your favorite veggie, this is a quick, healthy side dish recipe that you’ll make again and again.



Garlicky Sautéed Vegetable Medley

Yield: 6 servings

Garlicky Sautéed Vegetable Medley

A hearty, flavorful vegetable medley sautéed with red onions and garlic makes a healthy, quick easy side dish recipe.


  • 1 tablespoon olive oil
  • 1/2 cup diced red onions
  • 1 pound asparagus, cut into 1-inch pieces
  • 8 ounces baby bella mushrooms, halved
  • 2 cups diced yellow squash
  • 4 cloves garlic, minced
  • sea salt, to taste
  • freshly ground black pepper, to taste


  1. In a large skillet set over medium-high heat, add olive oil. Heat oil then add red onions and garlic. Sauté until onion has softened, about 2-3 minutes. Add asparagus, mushrooms and squash. Sauté until tender and lightly browned.
  2. Remove from heat, season with salt and pepper. Serve.

That looks so good! No need to do anything crazy with vegetables, just add them all together and they do the work for you. Yum!

Thanks you! So true Mary! A beautiful mix of vegetables need not be covered in heavy sauces to be wonderfully tasty.
