Can we talk for just a moment about cake batter cookies? Ok, maybe for a few minutes. These are the easiest cookies to make EVER. I’m all about scratch baking, but you already knew that. That being said, even the best bakers need a shortcut now and then. Sometimes you just need a sugar rush ASAP and ladies and gents, this is it.

A box of cake mix can magically be transformed into crazy good, soft golden cookies in mere moments. Add a handful of goodies and that takes these cake batter cookies over the top. In this case, I added white chocolate chips that I had leftover from those No-Bake Cookie Dough Bars. Next I added a handful of rainbow sprinkles because really, they are so much fun! I feel like anything that has rainbow sprinkles in it instantaneously becomes happy, festive and celebratory like that moist Funfetti Pudding Cake I made not too long ago. Sprinkles = Instant Fun

When Dudette comes home from school and wants something to eat, quick and easy is the only thing that works. I love the sprinkles in the cookies … they make them so happy!

love cake mix cookies, so easy and you can add whatever you want. I did a pineapple cake mix and through in coconut and nuts and white chocolate, oh my

Oh my goodness, Christine! Your versions sounds amazing. Love that idea! I made a dump cake like that last year. Love the idea of cookie form though.
