Eggnog Multi-Grain Rice Pudding with Pears & Spiced Honey

Yield: 4 servings

Eggnog Multi-Grain Rice Pudding with Pears & Spiced Honey

Classic rice pudding gets a twist with the addition of eggnog, pears and a multi-grain blend.


  • 3 cups eggnog
  • 1 cup Minute® Multi-Grain Medley
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 pear, cored and sliced
  • 1 teaspoon honey, divided
  • 1 teaspoon nutmeg, divided


  1. Combine eggnog, Minute® Multi-Grain Medley and salt in a medium saucepan. Bring to a boil, stirring constantly. Reduce heat to medium-low and simmer 12 minutes.
  2. In a medium bowl, lightly beat eggs. Whisking constantly, slowly drizzle in the hot eggnog mixture until half of it has been incorporated into the eggs.
  3. Stirring constantly, slowly pour the egg mixture back into the pan containing the remaining eggnog mixture. Continue stirring and cool on low heat for 1 minute being sure to keep the mixture from boiling.
  4. Remove from heat, cover and let stand 30 minutes.
  5. Divide pudding among 4 serving dishes. Evenly top with pear slices. Drizzle each with 1/4 teaspoon honey and sprinkle with 1/4 teaspoon nutmeg. Serve warm.
