If you’ve followed me for even a short period of time, you already know that I eat more than my fair share of eggs. They’re just so quick, easy and versatile. I love whipping up something as simple as two sunny sides and some fresh tomatoes while other times I like my eggs a little more dressed up, let this Asparagus, Artichoke and Sun Dried Tomato Frittata.

Now don’t let this fancy pants name fool you because this frittata is still just as easy to make as my sunny sides. I love combining fresh spring ingredients with my meals and I’m all about the spring veggies right now. Bring ’em on!

This frittata recipe is simply what the title says. A mere four ingredients, some salt and pepper then viola! You’ve got breakfast fit for a Sunday brunch or just as nice for a weekday treat or even dinner! I’m a big fan of breakfast for dinner. Also, feel free to change up what you put in your frittata. The possibilities are truly endless. Add cheese, add meats, other vegetables and more … Put your thinking cap on and get cookin’.

Dairy Free Spring Frittata

Fluffy dairy free egg frittata filled with spring veggies.

Ingredients

  • 12 eggs
  • 1/2 cup unsweetened almond milk (regular milk or heavy cream)
  • 1 tablespoon avocado oil or olive oil
  • 1 cup chopped asparagus
  • 1 cup chopped artichoke hearts
  • 1/4 cup julienned sun dried tomatoes
  • 1/2 teaspoons sea salt
  • 1/4 teaspoon fresh black pepper

Instructions

  1. Preheat oven to 400 degrees.
  2. In an oven safe skillet, heat oil. Sauté asparagus and artichokes just until tender, 4-5 minutes. Remove from heat.
  3. In a large bowl, whisk together eggs, milk, salt and pepper. Stir in sun dried tomatoes, asparagus and artichoke hearts.
  4. Pour egg mixture back into oven safe skillet. Place skillet in oven and bake for 15-20 minutes. Be sure not to overcook.
