With the holidays just around the corner, I start looking forward to all the times where we will gather with family and friends. I love all the holiday parties where we get to catch up with those we haven’t seen in a while.  Celebrations of thankfulness, family and tradition bring all these people together and of course, it brings them together over good food! No matter what day of the year, food unites us but no more than during the holidays.

We have a very large family and each year we gather together. It’s not just one long table that we gather around but 4 long tables. Long tables that are filled with warm hearts, comfortable conversation and a ton of food! Vast tables filled with turkey, ham, stuffing, mashed potatoes, corn, green beans, freshly baked bread and more! Oh and the desserts! One very full table filled with pies, cookies, holiday desserts galore.

As much as I look forward to our big family gatherings truth be told, it’s the more intimate holiday affairs that are my favorite. Christmas morning for us is about a small gathering and a brunch. Brunch filled with fresh fruit, pastries and recipes that echo the flavors of the season. This year, I’ll be serving this Cranberry Apple Baked French Toast. It’s the perfect stress-free addition to your holiday menu. Put it together the night before and it soaks up a delicious mixture of cinnamon kissed eggs. Then simply wake up, pop it in the oven and brunch is served!

This baked french toast recipe is filled with winter flavors of apple and cranberries, brimming with the warmth of cinnamon and brown sugar. I always love pairing fruit and cheese. Cranberry Apple Baked French Toast

This baked french toast recipe is perfect for a holiday brunch or a weekend breakfast. Filled with cranberries, apples and Jarlsberg cheese, it's sure to impress!

Ingredients

  • 1 large loaf of French bread, torn into large bite size pieces
  • 2 cups diced apples
  • 1/2 cup dried cranberries
  • 1 cup shredded Jarlsberg cheese
  • 7 eggs
  • 2 cups milk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • For Topping:
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 8 tablespoons butter, cut into pieces

Instructions

  1. Place bread pieces into a 9x13-inch baking dish. Sprinkle apples, cranberries and Jarlsberg cheese over bread and toss together. Set aside.
  2. In a large bowl whisk together eggs, milk, heavy cream, granulated sugar, vanilla extract and ground cinnamon. Pour evenly over bread mixture. Cover with plastic wrap and refrigerate overnight.
  3. Preheat oven to 350 degrees. In a medium bowl, mix together flour, brown sugar, cinnamon and salt. Cut in butter until mixture is sandy with pebble size pieces.
  4. Remove french toast from refrigerator. Sprinkle topping evenly over french toast. Bake in preheated oven for 60 minutes.
