Copycat Cheesecake Factory Ultimate Red Velvet Cake Cheesecake -

I don’t know about you but I looooooove Cheesecake Factory. I never tire of their menu and any time I can get my husband to take me there, I’m a happy gal. Of course, you know me well enough by now to know that the thing I love most there is dessert! Cheesecake is my second favorite dessert, trumped only by creme brûlée. Ooo, this Chocolate Amaretto Creme Brûlée is my all time favorite flavor! But back to cheesecake.

If you’ve ever perused the Cheesecake Factory menu, you’ve likely eyed up the Ultimate Red Velvet Cake Cheesecake. If you’re not familiar, well then hang onto your hats people! Layers of red velvet cake sandwich a whole cheesecake inside. Mind blown! Cheesecake inside a red velvet cake. Crazy culinary genius. So it was my mission to recreate that amazing dessert for you. Cocoa-laced red velvet cake, vanilla bean cheesecake, all covered in fluffy vanilla bean cream cheese icing. Want to see how I did?

Cream cheese and red velvet belong together, which is why this cake is so freaking outstanding looking.

Just finished making the cheesecake layer but realized once in the oven, that the instructions don’t say when to add the salt. So now it’s in the oven and can’t go back and add salt :(. Do you think it will affect the flavor very much?

Kate June 5, 2014 at 2:01 pm

Oh noooo!! I’m so sorry! I didn’t even realize my error in the instructions. Thanks for bringing it to my attention. I will be sure to fix that asap. As for the flavor, I’m sure it won’t effect it.

Is it critical that up use vanilla beans/paste? Would I be able to just use extract?

Kate June 15, 2014 at 1:10 pm

I wouldn’t say “critical.” You can certainly use vanilla extract however the flavor may change just a bit but it will still be just as tasty! Hope you like it!

Should I use gel or liquid food coloring?

Kate August 30, 2014 at 9:52 am

Oh, excellent question Hannah! For a truly vibrant color, use gel food coloring although liquid food coloring will definitely show up bright red also due to the amount used.

Thank you very much Amanda! I’m so happy to hear you think so. What’s not to love about cake and cheesecake together, right?

Does the frozen cheesecake layer I thaw before you serve it?

Kate November 22, 2018 at 12:12 am

Yes, you’ll need to allow time to thaw. This cake is a labor of love. Ideally I would make this cake a day in advance to allow that cheesecake layer to fully thaw. Once fully assembled, refrigerate until ready to serve. Hope this helps!
