When it comes to healthy treats, I love making chia pudding. Last year around this same time is when I first discovered the wonder that is chia seeds. Quickly Triple Berry Chia Pudding became my new favorite sweet snack, dessert and even breakfast. These little super seeds are a nutrition powerhouse! High in fiber, protein, Omega-3’s not to mention Magnesium, Phosphorus, Calcium, Zinc, Potassium and Vitamins B1, B2 and B3. Chia seeds are just crazy healthy. You can add them to many different things making it easy to enjoy them.

Add a scoop into your morning smoothie, sprinkle into your yogurt or on top of cereal or soak them in any liquid to turn them into a pudding-like consistency. This coconut almond chia pudding is definitely my favorite afternoon snack or evening dessert whenever my sweet tooth strikes lately. Think about an Almond Joy. Sweet coconut, dark chocolate and almonds. It’s a heavenly bite.

Coconut Almond Chia Pudding -

This coconut almond chia pudding is just like that Almond Joy bar with none of the guilt. Chia seeds mixed with coconut almond milk giving this chia pudding a ton of flavor alone but then sprinkle on some roasted almonds, toasted coconut and for a bit of a guilty pleasure, just a touch of heart-healthy chopped dark chocolate.  This chia pudding is quick to put together and will quickly become a favorite of yours also.

Coconut Almond Chia Pudding

10 minutes

Yield: 4 servings

Coconut Almond Chia Pudding

This coconut almond chia pudding is reminiscent of an Almond Joy candy bar with none of the guilt.


  • 16 ounces coconut almond milk
  • 1/2 cup chia seeds
  • 1 tablespoon coconut sugar
  • 1 teaspoon vanilla bean paste
  • 1/2 cup unsweetened coconut flakes, toasted
  • 1/2 cup coarsely chopped roasted almonds
  • 2 ounces dark chocolate, chopped


  1. In a medium bowl, stir together coconut almond milk, chia seeds, coconut sugar and vanilla bean paste. Cover and refrigerate at least 8 hours or overnight.
  2. Divide chia pudding into 4 small bowls and sprinkle each with 1/8 cup coconut flakes, 1/8 cup chopped roasted almonds and 1/2 ounce of dark chocolate.

Hi there! Coconut sugar is actually made from coconut sap so it’s not something you’d make yourself but more something that can be purchased. I like Nutiva Coconut Sugar. And same thing for vanilla bean paste, I use Nielsen Massey Vanilla Bean Paste. Hope this helps!
