As the temperatures heat up, it’s finally starting to feel like summer is on its way. Right around the corner, really. I am an autumn girl myself but I still welcome warm, sunny days. I love entertaining and once the temperatures become comfortable, everyone comes out of their shells. Having family and friends over for a barbecue is always a good time. But sometimes, you just want to hang with your girls. Sure, I love a girls night out but there’s definitely something to be said about a girls night in too!

Sitting out on the deck with a cool drink in hand is always a good place to start. Lavender Iced Tea is so refreshing on a warm evening. For a successful night in, having something to nosh on while you chat is an absolute must. I’m a big fan of chips and salsa. My Charred Corn Salsa is so easy to make and filled with vibrant flavors perfect for endless snacking. Other times, my girlfriends and I are more in the mood for something sweet to snack on.  That’s where these cinnamon nachos with strawberry salsa come in.

Much like my savory salsa recipe, this is beyond easy to make! You’ll want to make a nice big batch because your guests will be all over it. Baked cinnamon sugar tortilla chips are the crunchy carrying device for this fruity salsa recipe. Strawberries with a touch of fragrant thyme that adds a grown up, herbal flair to this sweet salsa. This is snack food at its finest and it’s perfect for your next girls night in.

Cinnamon Nachos with Strawberry Salsa

Yield: 8 servings

Cinnamon Nachos with Strawberry Salsa

Cinnamon-kissed tortilla chips for dipping in a sweet, fragrant strawberry thyme salsa. Perfect for entertaining or an evening in!

Ingredients

  • 8 (6-inch) flour tortillas
  • 4 tablespoons butter, melted
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 cups chopped strawberries
  • 2 teaspoons sugar
  • 1 teaspoon minced fresh thyme
  • 1 teaspoon balsamic vinegar

Instructions

  1. Preheat oven to 350 degrees. Brush one side of each tortilla with melted butter. In a small bowl, mix together sugar and cinnamon. Sprinkle tortillas with cinnamon sugar mixture.
  2. Cut each tortilla into 6 even triangles. Place on a baking sheet and bake in preheated oven for 10 minutes or until lightly golden and crisp. Remove from oven, move to a serving platter.
  3. In a medium bowl, toss strawberries with sugar, thyme and balsamic vinegar. Serve and enjoy.

Oh wow, I love this. What an amazing and creative idea. The flour tortilla with cinnamon sugar and that delicious fruit salsa. This is perfect for summer entertaining.

Such a fun summer app recipe! I love how easy this is to make. I’ve had something similar before and it’s so refreshing yet also leans toward a dessert!
