It’s a theme that repeats itself here, constantly being reinvented and reimagined. I do truly have a love affair with sweet and spicy combinations. This Chipotle Pineapple Martini is smoky, sweet with just a touch of spice and perfect for summer sipping.

These lazy hot days are perfect backyard cocktail days as we hold onto the end of summer before the back to school rush, before the crisp autumn air rolls in. I love pineapple and too frequently, I don’t enjoy it while it’s in season.

I love roasting coconut and making my Coconut Honey Roasted Pineapple with Yogurt & Pistachios. Tropical, tasty and the perfect combination of sweet with the cool yogurt and crunchy pistachios. But then I give it a little sprinkle of chile powder to finish it off and it’s perfection.

For this Chipotle Pineapple Martini I channeled that smoky, sweet flavor profile that I love so much. This cocktail is perfect for backyard barbecues or for sipping in front of the fire pit. Enjoy one before summer is over!

Chipotle Pineapple Martini

A sweet, spicy pineapple martini perfect for summer sipping.



  1. Fill a shaker cup halfway with ice and all ingredients. Shake vigorously. Pour between two martini glasses. Garnish with chipotle chile powder, if desired.

There are so many different martinis but this is a fun one! Decided to make them the other night. It was delicious!
