Ahh, the post-Easter days when we’re up to our eyeballs in hardboiled eggs and chocolate. Two of my very favorite things! Needless to say, where there are hardboiled eggs, there will be egg salad. But I can only eat so much plain ol’, plain ol’ egg salad. Enter this Chipotle Lime Egg Salad recipe to the rescue!

It doesn’t get any easier than egg salad for lunch. Smash up some eggs, a quick mix and toss it in between bread or over lettuce and life is good. Here I’ve taken those humble eggs and spiced them up a bit with the addition of lime and chipotle pepper. These are also two of my favorite things so it seemed like they should be together here.

Chipotle Lime Egg Salad -

Add a little mayo, salt and pepper and you’ve got a stellar, flavorful lunch in 5 minutes tops. Big win! I serve mine over greens but wrap it, sandwich it, you do you.

Yield: 1 serving

Chipotle Lime Egg Salad

This egg salad recipe is a smoky, spicy, citrus spin on the classic.


  • 2 hard boiled eggs, coarsely chopped
  • 1/2 tablespoon mayonnaise (I use Primal Kitchen because it has no sugar)
  • 1/8 teaspoon chipotle pepper
  • 1 teaspoon lime juice
  • salt/pepper, to taste


  1. In a bowl, mix all ingredients well. Taste and adjust chipotle pepper and lime to your liking if necessary.
