Happy new year! Where has the time gone? I don’t know about you be I feel like the past year has just flown by. As I reflect, I realize this year was a wonderful one filled with fun times and many wonderful memories made. The last few months of the year proved to be a challenging time though. Truth be told, it really kicked my butt! The sudden, unexpected death of a close friend brought things into perspective about how very short and precious life is. Tomorrow is never promised. It made me appreciate the moments I have each day with friends, family and my children.

Staffing issues at work lead to long hours and lots of them. This brought me to the brink of truly burning out. As much as I love being a paramedic, I was so over it. I was working 12-24 hours shifts a day, multiple days per week. Just when I thought I couldn’t take it another moment, thankfully a few new people were hired which took the weight off my shoulders. The extra money will be missed but my sanity has been restored.

Did I mention that while ALL this was going on, we were in the process of buying a new home and then we moved? This move was to a town which took us farther from our family then we’ve ever been before which was a difficult transition for all of us. While difficult, our new home and new town is well worth it! It’s a whole new world of possibilities and opportunities for our family.

So as we usher out 2015, I feel like the clouds have cleared, the sun is shining down on a bright new year and I’m warmly welcoming 2016! With the wonderful gluttony of the holidays behind us, I’m ready to take a much needed bread from all the indulgences. I ate my fair share sweets and decadent meals packed with butter and gravy. It’s time to start the new year off right with healthier, lighter meals.

Chipotle Lime Chicken And Potatoes

Yield: 6 servings

Chipotle Lime Chicken And Potatoes

Chicken and potatoes with lime, garlic and chipotle peppers. This is a flavor powerhouse!


  • 1 pound boneless, skinless chicken breasts
  • 2 pounds fingerling potatoes or small new potatoes, halved
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 2 garlic cloves, minced
  • 2 canned chipotle peppers in adobo sauce, finely minced
  • 1 tablespoon adobo sauce
  • 1 tablespoon lime zest
  • 1 tablespoon fresh chopped cilantro
  • 1 teaspoon kosher salt


  1. Preheat oven to 400 degrees.
  2. In a large bowl, whisk together olive oil, garlic, chipotle peppers, adobo sauce, lime zest, lime juice, cilantro and kosher salt.
  3. In bowl, toss potatoes until evenly coated. Using a slotted spoon, transfer potatoes to a 9x13-inch glass baking dish, reserving remaining mixture in bowl.
  4. Next, add chicken to bowl. Turn multiple times to coat chicken. Place in center of the baking dish and arrange the potatoes around the chicken breasts.
  5. Bake in preheated oven for 30-45 minutes, stirring occasionally until potatoes are tender and chicken is cooked through and no longer pink.
