Life in my neck of the woods has been more than a little crazy lately. Over the top stressful and insanely busy but all for a very good reason. I moved to a new home! This is actually the very first house I’ve ever purchase so talk about exciting times. Despite being incredibly exciting, it’s hands down one of the most stressful and anxiety-inducing experiences of my entire life. Mike and I each took turns freaking out but together, we managed to help each other get through it. Our new plan? Stay in our new home forever!

These days, we’re settling in. Unpacking boxes, organizing cabinets and trying to figure out how to organize the girls playroom because right now that room is simply a huge pile of toys in the center of the room. There’s so much to be done but it’s so much fun! I’m taking my time with it and really enjoying finding places for all our belongings. Since I have so much on my plate these days since the move, I’ve been trying to make easy dinners and things that I can make ahead. That’s where these Cheesy Chicken Quinoa Burritos come in because they fit both those bills!

Cheesy Chicken Quinoa Burritos -

These hearty burritos are filled with chicken, peppers and onions seasoned with cumin, garlic and chile powder. Quinoa stirred into the mix takes the place of rice you might usually find in burritos. Then a hefty sprinkle of Kerrygold Reserve Cheddar melts to perfection, making these flavorful burritos super cheesy. Cooking the filling takes only about 15 minutes then simply roll up your burritos. Easy peasy!

These can be make well before dinner then pop them in the oven for 20 minutes and viola! Dinner is served. Even better? You could make a big ol’ batch and freeze them. Then you’ve got an easy dinner or lunch later in the week. No matter when you decide to enjoy these Cheesy Chicken Quinoa Burritos, you’re sure to love them!

Cheesy Chicken Quinoa Burritos

Burritos filled with flavorful chicken, peppers, onions, quinoa and cheddar cheese. These burritos make a quick dinner or an easy make ahead meal!


  • 1 pound chicken breasts, cut into thin slices
  • 2 tablespoon Kerrygold Pure Irish Butter, divided
  • 1 small onion, thinly sliced
  • 1 red bell pepper, seeded and sliced into strips
  • 1 orange bell pepper, seeded and sliced into strips
  • 1 clove garlic, minced
  • 1 cup quinoa, cooked according to package directions
  • 1 1/2 teaspoons chile powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 cups grated Kerrygold Reserve Cheddar
  • 8 (10-inch) flour tortillas
  • Salsa and sour cream, optional for serving


  1. In a large skillet set over medium-high heat, melt 1 tablespoons Kerrygold Pure Irish Butter. Add sliced chicken and sauté until browned and cooked through. Remove from pan and keep warm.
  2. To skillet, add remaining 1 tablespoon butter and melt. Add onion, red and orange peppers and garlic. Cook until tender. Return chicken to pan. Stir in cooked quinoa, chile powder, cumin, salt and pepper.
  3. Evenly distribute mixture among flour tortillas. Top each with 1/4 cup Kerrygold Reserve Cheddar Cheese.
  4. Roll each tightly into a burrito. Wrap in heavy duty foil and bake in a 400 degree oven for 20 minutes. Or you can store in the refrigerate or freeze for an easy make-ahead meal. When ready to bake, remove from freezer, defrost in refrigerator then bake as instructed above. Alternately, remove from foil and heat in microwave until heated through.
