Last summer, I discovered and shared with you the easiest bread recipe EVER! Ice cream bread. Do you remember my Cookies & Cream Ice Cream Bread? If you missed it, trust me you’ll want to check it out. Three ingredients stirred together in a bowl and viola, you have bread filled with Oreo cookies. I know, right??? How good does that sound? Yup, it’s as good as it sounds and stirring together three ingredients is just about as easy as it gets, folks. Today I’m back with round two of ice cream bread with this Cherry Garcia Ice Cream Bread recipe!

These days, it’s all about easy. I’m nearly one month post-surgery and I have barely cooked or baked anything in all that time. Next week I’ll be out of my sling and I’ve been tourturing myself with twice daily bouts of physical therapy. Hopefully my recovery will shift into high gear and I’ll be 100% better in no time. I’m also hoping to soon be pain-free for the first time in nearly 8 months. Thanks to some successfully preplanning, I made and froze nearly three weeks worth of meals prior to my surgery so my dinner preparation has been beyond easy. Defrost and bake or plop into a slow cooker. Viola! Dinner is served. So easy and I’m so glad I thought to do that prior to going under the knife. My mother-in-law was all ready to be my helper then she fell, breaking her right arm! Thankfully, my freezer meals mean that both she and I have really been able to take it easy lately, at least where dinner is concerned.

Cherry Garcia Ice Cream Bread - FoodBabbles.comBaking has been nonexistent but this week the girls asked if we could do “a baking project?” How can I resist their desire to bake? I wanteded something they could completely make on their own and that’s when my thoughts turned to ice cream bread. I asked the girls if they wanted to make a sweet bread. When asked what flavors they had in mind, they quickly responded “cherries” and followed that up with “chocolate!” Okay! That sounds like Ben & Jerry’s Cherry Garcia Ice Cream to me. We beefed up the cherry and chocolate factor a bit with the addition of more chocolate chips and some dried sweet cherries. The ingredient list is still splendidly small and all made in one bowl which is always a good thing.

My girls whipped this up alone and even washed the dishes! This ice cream bread recipe is definitely the easiest recipe ever and tasty too. I know you’ll enjoy it as much as we did.

Cherry Garcia Ice Cream Bread

Prep Time: 5 minutes

Cook Time: 40 minutes

Yield: 8 servings

Cherry Garcia Ice Cream Bread

Four ingredients and one bowl equals delicious cherry chocolate ice cream bread!


  • 1 pint Ben & Jerry's Cherry Garcia Ice Cream, softened
  • 1 1/2 cups self-rising flour
  • 1/2 cup sweet dried cherries
  • 1/2 cup semi-sweet chocolate chips


  1. Preheat oven to 350°F. Spray an 8" x 4" loaf pan with baking spray containing flour and line the bottom with a rectangle of parchment paper. Set aside.
  2. In a large bowl, mix together softened ice cream and self-rising flour until all the flour is evenly moistened. Stir in cherries and chocolate chips.
  3. Scrape batter into prepared pan and smooth the top.
  4. Bake in preheated oven for 40-45 minutes, until a tester inserted in the middle comes out clean. Remove from oven and turn bread carefully out of the baking pan. Cool completely on a wire rack.

Glad you are getting better Kate, and so happy to hear your little ones are excited with baking and helping! Now to get your MIL better…. I love this type of bread, and the ice cream flavor choices are endless!
