Chai Spiced Eggnog Cookies

T’was the night before Christmas and all through the house, children were baking! At least my children will be. Today we plan to make cookie for Santa. Each year when this day arrives the girls get so excited when the special plate and glass that are reserved only for The Big Man, make their appearance. They know when that plate comes out, it means cookies will be made. For them it’s very much a “one for you, one for me” system so I’m sure they’re just as excited for the eating of cookies as they are for leaving them for Santa.

This year we will be making our standard sugar cookies, cut into holiday shapes and all dressed up with icing and sprinkles. As luck would have it though, I happen to have some eggnog leftover from the eggnog rice pudding I made earlier this week. I’ve never been one to enjoy a cup of eggnog. Texturally speaking, I loathe it but I love the taste so during the holidays I find myself often baking with it.

So today while the kids cut out sugar cookies I’ll be making another batch of these Chai Spiced Eggnog Cookies. I always feel like cookies are best enjoyed with a hot cup of tea or coffee so many times I find myself putting those warm beverages IN my cookies. These eggnog cookies are one of those times. They are soft, almost cake-like and filled with warm winter spices and the flavor of chai tea. The flavor is spectacular! So as you bake up cookies for your Christmas celebration tomorrow or for a certain jolly guy this evening, be sure to give these a try. They’re quick to make which means they’re the perfect last minute cookie to add to your list!



Chai Spiced Eggnog Cookies

30 minutes

Yield: 3 dozen

Chai Spiced Eggnog Cookies


    For Cookies:
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 cup eggnog
  • 1 teaspoon pure vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon chai tea
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 tsp cinnamon
  • 1/2 tsp cardamom
  • 3/4 tsp nutmeg
  • For Glaze:
  • 1 1/2 cups confectioners' sugar
  • 1/2 teaspoon chai tea
  • 3 tablespoons eggnog


    Make Cookies:
  1. Preheat oven to 350°F. Line baking sheets with parchment paper.
  2. In a large bowl using a mixer, cream together butter and sugar until pale and fluffy. Add egg and beat until incorporated. Add eggnog and vanilla extract and mix again until incorporated.
  3. In a large bowl, whisk together flour, chai tea, baking soda, baking powder, salt, cinnamon, cardamom and nutmeg.
  4. With the mixer on medium, slowly add the flour mixture until combined.
  5. Drop by rounded tablespoonful onto prepared baking sheets. Bake in preheated oven 10-12 minutes. Remove from oven and cool on baking sheets for 5 minutes then move to a wire rack to cool completely.
  6. Make Glaze:
  7. In a small bowl, mix together sugar and tea. Add the eggnog one tablespoon at a time until desired consistency is reached, adding more if necessary. Spread or drizzle onto cooled cookies.
