Chia pudding is one of those things that I adore because it’s crazy versatile. It doesn’t get much more simple than chia seeds and liquid. From there the flavor possibilities are absolutely endless. Add fruit, chocolate, peanut butter, nuts, other seeds … See what I mean? Whatever you’re in the mood for, you can satisfy that craving in a healthier way with chia pudding.

The other day I was having a wicked craving for a chai tea latte. I recently began abstaining from dairy for health reasons so I wasn’t running out to the cafe to give into that craving so I decided to make this Chai Chia Pudding instead. Oh my goodness, I’m so glad I did!

Chai Chia Pudding -

Chia seeds with unsweetened vanilla almond milk is my favorite base recipe. To that I added vanilla bean paste and chai spices. Cardamom, cinnamon, ginger and a dash of cloves. I whisked it all together and then it was a waiting game. Waiting is always the hardest part.

A few hours later this beautifully spiced, barely sweet chia pudding emerged and was well worth every moment I waited. If you love chai you’ll adore this chia pudding recipe for sure!

Chai Chia Pudding

Chia pudding with notes of maple, vanilla, cinnamon, ginger, cardamom and more!


  • 2 cups unsweetened vanilla almond milk
  • 1/2 cup chia seeds
  • 2 tablespoons pure maple syrup
  • 1 teaspoon vanilla bean paste
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • 1/8 teaspoon ground cloves


  1. In a large bowl, whisk together all ingredients until well combined. Cover and refrigerate for 8 hours.
