Cheese and pasta are a perfection alone or can be a beautiful blank canvas for any number of ingredients, allowing you to really get creative with dinner. Sometimes creativity translates to mean time consuming. Let’s be honest, on a weeknight sometimes you just need something quick but you don’t want to skimp on taste either. Roasted Cauliflower Portobello Two Cheese Macaroni

Yield: 4 servings

Roasted Cauliflower Portobello Two Cheese Macaroni

Smooth, creamy, hearty macaroni and cheese filled with roasted cauliflower and baby portobello mushrooms.


  • 1 cup cauliflower florets
  • 1 tablespoon olive oil
  • 3/4 teaspoon salt, divided
  • 3/4 teaspoon ground black pepper, divided
  • 1 teaspoon rubbed sage
  • 1 tablespoon butter
  • 1/2 cup yellow onion, diced
  • 1 cup sliced mushrooms
  • 1 tablespoon balsamic vinegar
  • 1 box Horizon Pasta Shells & White Cheddar Cheese + ingredients to prepare
  • 1/4 cup milk
  • 1/3 cup goat cheese crumbles


  1. Preheat oven to 400 degrees. Have ready a large baking sheet.
  2. Place a large pot of water on to boil to begin preparing Horizon Pasta Shells & White Cheddar Cheese.
  3. In a large bowl, drizzle cauliflower florets with olive oil, sprinkle with 1/2 teaspoon salt, 1/2 teaspoon ground black pepper and 1 teaspoon rubbed sage. Spread evenly on baking sheet. Roast in preheated oven for 20 minutes or until tender, stirring halfway through cook time.
  4. In a large skillet, melt butter over medium-high heat. Add onions and sauté until translucent, 2-3 minutes. Add mushrooms and continue to sauté until they’ve lost their moisture and browned, 5-7 minutes. Add balsamic vinegar to pan. Sprinkle with 1/4 teaspoon salt and 1/4 teaspoon ground black pepper. Stir to distribute.
  5. Prepare Horizon Pasta Shells & White Cheddar Cheese according to package directions, stirring in an additional 1/4 cup milk and goat cheese until smooth and creamy. Gently fold in onion/mushroom mixture and roasted cauliflower. Serve immediately.

You have me fooled that this is mac and cheese from a box. It looks so rich and creamy and I love the addition of cauliflower and mushrooms. Makes it a complete meal and add a little health value to it all!
