The first time I ever tasted noodle kugel was in elementary school. We were all supposed to bring in a holiday dish to share with our classmates. I recall thinking the noodle kugel seemed like a strange mixture. Cottage cheese? Noodles? But the idea of the feast was that everyone try new things so down the hatch it went. I loved it! I think I had probably expected it to taste savory and was pleasantly surprised when the dish was sweet and speckled with raisins. Not being the biggest fan of raisins, I picked them all out but they didn’t stop me from enjoying that noodle kugel.

Over the years I’ve had noodle kugel a few more times. I always enjoy it so much and I don’t know why it had never occurred to me to make it at home. Last year during Hanukkah my friend Lisa posted this spectacular Caramel Apple Upside Down Noodle Kugel. Talk about mind-blowing! I bookmarked it and vowed to make it soon. Then, as so often happens, it got completely buried in my bookmarks and forgotten. Until now.

In this Caramel Apple Noodle Kugel tender egg noodles are baked in a sweet custard of cottage cheese and sour cream on top of cinnamon brown sugar apple slices. When it’s done baking and emerges from the oven, you invert it so that those lovely caramelized apples are on top. Those magnificent apples paired with the sweet noodles are utterly amazing. Way better than raisins! After finally making this recipe, I am kicking myself for taking so long to do so. I’m so happy that our ingredients of pasta and cheese for Improv Challenge this month prompted me to remember this incredible noodle kugel that I’d been dying to make.

Oh! My! Goodness! As soon as I can find (better yet, make!) a decent egg noodle we are SO having that for dessert!

That kugel looks fantastic. Sadly, I am the only one in the family that ever enjoyed it. I wish I could convince a few of them. Maybe I need to make your photo the wallpaper on the kids’ computer, lol.
