Are you familiar with shrubs? I’m not talking short, leafy bushes. I’m talking old school drinking vinegars. Yup, vinegar I can drink! If you’ve been a reader here for any length of time you already know I’m all about balsamic. So here I have a legit opportunity to enjoy my favorite vinegar in a whole new way, drinking it! So this may sound a little crazy but I promise, I would not lead you astray. This balsamic cherry shrub recipe not only makes a fantastic addition to my Bourbon Balsamic Cherry Shrub Cocktail but this flavorful shrub can be drizzled over ice cream, fresh fruit or even made into a fancy soda by just topping it off with some bubbly seltzer water.

So wait, back it up … what the heck is a shrub? A shrub is simply fruit, sugar and vinegar, that’s it. The fruit and vinegar are set in a cool dark place to meld into flavorful goodness. After not so patiently waiting, you’ll have the most flavorful concoction that can then be transformed into this refreshingly vibrant bourbon cherry cocktail. It’s sweet and a bit tart with notes of honey, vanilla bean and of course, cherries and balsamic vinegar. This cocktail is a truly special sip.Bourbon Balsamic Cherry Shrub Cocktail -

Bourbon Balsamic Cherry Shrub Cocktail

Yield: 16 ounces

Bourbon Balsamic Cherry Shrub Cocktail

Cherry balsamic shrub is the star of this cocktail but can also be make into a non-alcoholic soda, drizzled over fruit or ice cream and more!


    For Shrub:
  • 3 cups pitted and halved sweet cherries
  • 1 vanilla bean, split and seeds scraped
  • 2 cups balsamic vinegar
  • 1 3/4 cups granulated sugar
  • 1/4 cup honey
  • For Bourbon Balsamic Cherry Shrub Cocktail:
  • 2 ounces bourbon
  • 1 ounce balsamic cherry shrub
  • lemon-lime soda


  1. In a sterile 1 quart jar, muddle together cherries, vanilla been seeds and pod until cherries are well mashed.
  2. In a small saucepan, bring balsamic vinegar to a boil and pour into jar. Wipe rim of jar with a clean cloth. Cover mouth of jar with plastic wrap then screw on jar lid. Refrigerate for 2 weeks. Each day, give the jar a hearty shake then return to the refrigerator.
  3. After 2 weeks, remove jar from refrigerator. Strain balsamic cherry mixture through a fine mesh sieve into a small saucepan. Add sugar and honey. Bring mixture to a boil and stir until sugar has dissolved. Remove from heat and cool completely. Once cool, pour shrub into a sterilize jar. Shrub can be stored in the refrigerator for up to 6 months.
  4. To Make Bourbon Balsamic Cherry Shrub Cocktail:
  5. Fill a shaker halfway with ice. Shake together bourbon and balsamic cherry shrub. Pour into a glass filled with ice and top with lemon-lime soda.
